Creamy Greek yogurt, jammy eggs, fresh chives, whole-grain mustard, and lemon combine to create a protein-rich breakfast that is ready in minutes. The tangy egg mixture pairs perfectly with crisp, toasted sourdough for a creamy, flavorful, and satisfying meal.
Ingredients
- 1 thick slice artisan sourdough bread, about 1 inch thick
- 1 teaspoon olive oil (optional)
- 2 large eggs
- 2 tablespoons plain Greek yogurt
- 1 teaspoon whole-grain mustard
- 1 teaspoon fresh lemon juice
- 1 tablespoon finely chopped fresh chives, plus additional for garnish
- 1/8 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- Flaky sea salt, for finishing (optional)
Instructions
- Fill a small saucepan with enough water to cover the eggs by at least 1 inch. Bring the water to a gentle boil over medium-high heat.
- Carefully lower the cold eggs into the boiling water with a spoon. Cook for 6 1/2 minutes for soft, jammy yolks or 7 minutes for slightly firmer yolks.
- Immediately transfer the eggs to an ice-water bath and let stand for 5 minutes to stop the cooking.
- While the eggs cool, lightly brush the sourdough with the olive oil, if using. Toast until deeply golden and crisp.
- Peel the eggs and place them in a small bowl. Coarsely chop the eggs, then gently mash a portion with a fork, leaving plenty of larger pieces for texture.
- Add the Greek yogurt, whole-grain mustard, lemon juice, chives, kosher salt, and black pepper.
- Fold gently until just combined.
- Taste and adjust the seasoning with additional salt, pepper, or lemon juice, if needed.
- Spoon the egg mixture evenly over the toasted sourdough.
- Garnish with additional chives, flaky sea salt, and freshly ground black pepper. Serve immediately.
Cook’s Notes
- Cooking the eggs for 6 1/2 minutes produces soft, jammy yolks. Cook them for 7 minutes for slightly firmer yolks.
- Full-fat Greek yogurt produces the creamiest texture, while low-fat Greek yogurt offers a lighter option.
- Whole-grain mustard provides texture and a mild tang. Dijon mustard may be substituted for a smoother flavor.
- Freshly squeezed lemon juice provides a brighter flavor than bottled lemon juice.
- Toast the bread until deeply golden so it remains crisp beneath the creamy topping.
- Serve immediately after assembling to prevent the toast from becoming soft.
- For additional protein, top with smoked salmon, sliced turkey breast, cottage cheese, or an additional egg.
