Creamy Chicken, Bacon, and Cheddar Wrapped in Golden Flour Tortillas

This crowd-friendly tortilla bake combines tender chicken, smoky bacon, sharp cheddar cheese, ranch dressing, and sour cream inside a golden, buttery tortilla crust. Sized for a standard 9-by-13-inch baking dish, the filling remains creamy without becoming overly thick, while reserved bacon and cheese add texture and help the bake hold together when sliced.

Yield: 6 generous servings or 9 appetizer portions

Ingredients

For the Filling

  • 1 1/2 pounds cooked chicken, shredded or cut into small pieces
  • 8 strips bacon, cooked until crisp and chopped, divided
  • 9 ounces sharp cheddar cheese, freshly shredded and divided
  • 1/2 cup ranch dressing, plus up to 1 tablespoon more as needed
  • 6 ounces sour cream, softened slightly
  • 3/4 packet ranch seasoning mix, approximately 2 to 2 1/4 tablespoons
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup thinly sliced green onions, optional

For Assembly

  • 7 large burrito-size flour tortillas, as needed
  • 2 teaspoons unsalted butter, melted
  • Ranch dressing, for serving, optional
  • Sliced green onions or chopped fresh parsley, for garnish, optional

Preparation

  1. Preheat the oven to 350°F. Lightly grease a 9-by-13-inch baking dish that is at least 2 inches deep.
  2. Reserve approximately one-quarter of the chopped bacon and 3 ounces of the shredded cheddar cheese for assembly.
  3. In a large mixing bowl, combine the chicken, remaining bacon, remaining 6 ounces cheddar cheese, 1/2 cup ranch dressing, sour cream, ranch seasoning, black pepper, and green onions, if using.
  4. Fold the ingredients together gently until the chicken is evenly coated. The filling should be creamy and cohesive without visible pools of dressing. Add up to 1 additional tablespoon ranch dressing only if the mixture appears dry.
  5. Arrange tortillas around the perimeter of the prepared baking dish, placing one across each short end and two along each long side. Overlap them across the bottom and allow approximately one-third of each tortilla to extend beyond the rim.
  6. Use part or all of an additional tortilla to cover any exposed areas on the bottom of the dish.
  7. Spread the chicken mixture evenly over the tortillas, keeping the filling approximately 1 inch away from the outer edges.
  8. Sprinkle the reserved cheddar cheese and bacon evenly over the filling.
  9. Place one tortilla over the center of the filling.
  10. Fold the overhanging portions of the tortillas inward over the center tortilla, overlapping them to enclose the filling completely.
  11. Press the folded tortillas down gently to compact the filling and help the top remain closed.
  12. Brush the top evenly with the melted butter.
  13. Cover the baking dish loosely with aluminum foil and bake for 20 minutes.
  14. Remove the foil and continue baking for 15 to 20 minutes, or until the tortillas are golden brown and the center is thoroughly heated.
  15. For additional browning, broil for 1 to 2 minutes, watching closely to prevent burning.
  16. Remove the baking dish from the oven and allow the tortilla bake to rest for 10 minutes before cutting.
  17. Garnish with sliced green onions or chopped parsley and serve with additional ranch dressing, if desired.

Cook’s Notes

  • Use lightly seasoned chicken because the bacon, cheddar cheese, ranch dressing, and ranch seasoning already contribute considerable salt.
  • Begin with 1/2 cup ranch dressing. Add the remaining tablespoon only if the filling needs additional moisture.
  • Allow the sour cream to stand at room temperature for approximately 15 minutes before mixing so it blends more evenly.
  • Freshly shredded cheddar melts more smoothly than packaged pre-shredded cheese.
  • Reserving some of the bacon for the top preserves more crisp texture.
  • Mix the filling in a separate bowl rather than directly on the tortillas to prevent tearing and ensure even seasoning.
  • Fold the ingredients gently and only until combined. Excessive mixing can break down the chicken and create a dense filling.
  • The exact number of tortillas required will depend on their diameter. Six may be sufficient, but keeping a seventh available ensures complete coverage.
  • The bottom of the dish should be completely covered, and the outer tortillas should extend far enough beyond the rim to fold securely over the filling.
  • A light-colored metal pan will produce a slightly crisper bottom than a glass baking dish.
  • Keeping the oven at 350°F throughout reduces the risk of overbrowning the exposed tortilla edges.
  • Allow the bake to rest for 10 minutes before slicing so the filling can set and the portions hold together.
