Carter Family Recipes

Shrimp Carbonara is a rich yet surprisingly light pasta dish featuring tender shrimp, crisp bacon, and perfectly cooked spaghetti enveloped in a silky Parmesan and egg sauce. Rather than relying on heavy cream, the sauce is created by gently combining eggs, freshly grated cheeses, rendered bacon fat, and reserved pasta water to achieve its signature creamy texture. Fresh garlic, cracked black pepper, and Italian parsley complement the delicate sweetness of the shrimp while adding layers of flavor. Elegant enough for entertaining and easy enough for a weeknight dinner, this recipe delivers restaurant-quality results with simple techniques.

Yield: 4 servings

Ingredients

  • 12 ounce spaghetti
  • 1 tablespoon kosher salt (for the pasta water)
  • 8 ounce thick-cut bacon, diced
  • 1 pound large shrimp, peeled and deveined
  • 3 garlic cloves, minced
  • 3 large eggs, room temperature
  • 1 cup freshly grated Parmesan cheese
  • 1/4 cup freshly grated Pecorino Romano cheese
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon kosher salt, or to taste
  • 1 cup reserved hot pasta water
  • 2 tablespoon chopped fresh Italian parsley
  • 1 teaspoon finely grated lemon zest (optional)
  • additional freshly grated Parmesan cheese, for serving

Preparation

  1. Cook the Pasta Bring a large pot of generously salted water to a boil. Add the spaghetti and cook until al dente according to the package directions. Reserve 1 cup of the pasta water before draining. Do not rinse the pasta.
  2. Prepare the Sauce Base In a medium bowl, whisk together the eggs, Parmesan cheese, Pecorino Romano cheese, and black pepper until smooth and well combined.
  3. Cook the Bacon While the pasta cooks, place the diced bacon in a large skillet over medium heat. Cook until crisp, then transfer the bacon to a paper towel-lined plate. Leave about 2 tablespoons of the rendered bacon fat in the skillet.
  4. Cook the Shrimp Add the shrimp to the skillet and cook for 1 to 2 minutes per side, just until pink and opaque. Add the minced garlic during the final 30 seconds of cooking. Remove the skillet from the heat immediately to prevent overcooking.
  5. Finish the Carbonara Add the hot drained spaghetti and cooked bacon to the skillet with the shrimp. Toss to combine. Allow the pan to cool for about 30 seconds, then slowly pour in the egg and cheese mixture while continuously tossing the pasta. Gradually add the reserved pasta water, a few tablespoons at a time, until the sauce becomes silky and evenly coats the pasta.
  6. Serve Stir in the chopped parsley and the lemon zest, if using. Taste and adjust the seasoning with additional kosher salt and freshly ground black pepper. Divide among warm serving bowls and garnish with additional freshly grated Parmesan cheese.

Cook’s Notes

  • Freshly grated Parmesan and Pecorino Romano melt more smoothly than pre-shredded cheeses.
  • Room-temperature eggs blend more easily into the hot pasta and help produce a silky sauce.
  • Never add the egg mixture while the pan is over direct heat or the eggs may scramble.
  • Reserved pasta water is the key to achieving the proper consistency. Add only enough to create a smooth, glossy sauce.
  • Shrimp cook very quickly and become tough if overcooked.
  • Leftovers may be gently reheated over low heat with a small splash of water to loosen the sauce.
