This Buffalo Chicken Caesar Crunch Wrap combines crispy breaded chicken, tangy homemade Caesar dressing, sweet-and-spicy Buffalo sauce, cool romaine lettuce, melted mozzarella, Parmesan Reggiano, and crunchy croutons inside a toasted flour tortilla.

The chicken is lightly coated in Buffalo sauce so the breading stays crisp, while the Caesar salad adds a cool, creamy contrast. Crushed croutons provide extra crunch, and the finished wrap is toasted until golden and crisp on the outside.

  • 1/3 cup finely grated Parmesan Reggiano
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, finely grated

  • 1 tablespoon Dijon mustard

Crispy Chicken

  • 10–12 ounces boneless, skinless chicken breast
  • Salt and freshly ground black pepper
  • 1/4 cup mayonnaise
  • 3/4 cup seasoned breadcrumbs
  • 1/4 cup panko breadcrumbs
  • 3–4 tablespoons beef tallow or neutral cooking oil, for frying

Caesar Salad

  • 3 cups thinly sliced romaine lettuce

For the Crunch Wraps

  • 2 large burrito-size flour tortillas
  • 1/2 cup shredded mozzarella
  • Crispy Buffalo chicken
  • Caesar salad
  • 1/2 cup croutons, coarsely crushed
  • 1/4 cup freshly grated Parmesan Reggiano
  • Additional Caesar dressing, as desired
  • Additional Buffalo sauce, for serving

Instructions

Make the Caesar Dressing

  1. Add the mayonnaise, Parmesan Reggiano, lemon juice, garlic, anchovies, Worcestershire sauce, Dijon mustard, and black pepper to a medium bowl.
  2. Whisk until smooth and creamy.
  3. Taste and add salt only if needed. The anchovies, Parmesan, and Worcestershire already provide considerable saltiness.
  4. Refrigerate until ready to use.

Make the Buffalo Sauce

  1. Combine the Buffalo-style hot sauce, butter, honey, and Dijon mustard in a small saucepan.
  2. Heat over low heat, whisking occasionally, until the butter has melted and the sauce is smooth.
  3. Remove from the heat and set aside.

Prepare the Chicken

  1. Place the chicken between two sheets of plastic wrap or parchment paper.
  2. Pound to an even thickness of approximately 1/4 to 3/8 inch.
  3. Season both sides lightly with salt and black pepper.
  4. Spread a very thin coating of mayonnaise over both sides of the chicken.
  5. Combine the seasoned breadcrumbs and panko in a shallow dish.
  6. Press the chicken firmly into the breadcrumb mixture until evenly coated on both sides.

Cook the Chicken

  1. Heat the beef tallow or cooking oil in a large skillet over medium to medium-high heat.
  2. Add the chicken and cook for approximately 3–4 minutes per side, or until golden brown, crisp, and cooked through to an internal temperature of 165°F.
  3. Transfer the chicken to a wire rack or paper-towel-lined plate.
  4. Let rest for 2–3 minutes.
  5. Slice the chicken into strips.
  6. Immediately before assembling the wraps, brush or lightly toss the chicken with enough Buffalo sauce to coat it without saturating the breading.

Make the Caesar Salad

  1. Place the romaine in a large bowl.
  2. Add 3 tablespoons Caesar dressing and the Parmesan Reggiano.
  3. Toss gently until the lettuce is lightly coated.
  4. Add a little more dressing only if needed.

Assemble the Crunch Wraps

  1. Lay one flour tortilla flat on a work surface.
  2. Sprinkle 1/4 cup mozzarella over the center.
  3. Arrange half of the Buffalo chicken over the mozzarella.
  4. Top with half of the Caesar salad.
  5. Sprinkle with half of the crushed croutons and 2 tablespoons Parmesan Reggiano.
  6. Drizzle with a small amount of additional Caesar dressing, if desired.
  7. Fold the outside edges of the tortilla inward toward the center, overlapping the folds to completely enclose the filling.
  8. Repeat with the second tortilla.

Toast the Crunch Wraps

  1. Heat a clean skillet over medium heat.
  2. Place the crunch wrap seam-side down in the dry skillet.
  3. Cook for 2–3 minutes, or until golden brown and sealed.
  4. Carefully flip and toast the second side for 1–2 minutes.
  5. Let rest for about 2 minutes before cutting.
  6. Serve immediately.

Cook’s Notes

  • Lightly coat the chicken with Buffalo sauce rather than soaking it so the breading stays crisp.
  • Freshly grated Parmesan Reggiano gives the dressing and salad the best flavor.
  • Dress the romaine immediately before assembly to keep it crisp.
  • Crush the croutons into roughly pea-sized pieces so they add crunch without tearing the tortilla.
  • Burrito-size tortillas are easiest to fold securely around the filling.
  • Beef tallow gives the chicken a particularly crisp, savory crust, but avocado, canola, or vegetable oil also works well.
  • The Caesar dressing can be made several hours ahead and refrigerated until needed.
