Crisp cucumber and juicy pear combine with sharp white cheddar, toasted pecans, and fresh chives in a bright honey-lemon dressing. Sweet, savory, tangy, and gently spicy, this refreshing salad is equally suited to a casual lunch or special-occasion meal.

Ingredients

  • 2 firm-ripe Bosc or Anjou pears, cored and cut into 1/2-inch pieces
  • 1 teaspoon freshly squeezed lemon juice
  • 1 English cucumber, quartered lengthwise and cut into 1/2-inch pieces
  • 3 ounces extra-sharp white cheddar, cut into 1/4-inch cubes
  • 1/3 cup pecans, toasted, cooled, and roughly chopped
  • 2 tablespoons finely chopped fresh chives
  • Flaky salt, for finishing
  • Additional red pepper flakes, if desired

Honey-Lemon Dressing

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon red pepper flakes
  • Pinch of fine salt

Instructions

  1. Place the pears in a large serving bowl and gently toss with 1 teaspoon lemon juice to prevent browning.
  2. Whisk the olive oil, 1 tablespoon lemon juice, honey, Dijon mustard, black pepper, red pepper flakes, and fine salt until emulsified.
  3. Add the cucumber, cheddar, and chives to the pears.
  4. Add about three-quarters of the dressing and toss gently. Taste and add the remaining dressing only if needed.
  5. Fold in the toasted pecans immediately before serving.
  6. Finish with flaky salt and additional red pepper flakes, if desired. Serve immediately.

Cook’s Notes

  • Select pears that yield only slightly when pressed near the stem. Soft pears can become mushy when tossed.
  • Toast the pecans in a dry skillet over medium-low heat for 3–5 minutes, stirring frequently. Cool completely before adding.
  • The ingredients can be prepared separately several hours ahead, but the pears should be cut and the salad assembled shortly before serving.
  • Feta or goat cheese may replace the cheddar for a softer, tangier result.
  • Toasted walnuts or pistachios may replace the pecans.

Serving Suggestions

Serve alongside grilled chicken, pork tenderloin, salmon, or turkey sandwiches. For a light meal, spoon it over arugula and serve with warm crusty bread.

Beverage Suggestions

Pair with lemon sparkling water, lightly sweetened iced tea, Sauvignon Blanc, or a dry sparkling wine.
