A thick, creamy blue cheese sauce balancing savory cheese, gentle honey sweetness, bright acidity, and clean cayenne heat. Part of the blue cheese is mashed into the base for full flavor, while the remainder is folded in to provide substantial crumbles.

Ingredients

  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 2 tablespoons cultured buttermilk, plus more as needed
  • 5 ounces blue cheese, divided
  • 2 tablespoons honey
  • 2 teaspoons apple cider vinegar
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried dill
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cayenne pepper
  • Kosher salt, only if needed

For Finishing

  • 1 tablespoon honey
  • 1 small pinch cayenne pepper
  • Blue cheese crumbles
  • Freshly ground black pepper

Instructions

  1. Combine the apple cider vinegar, Worcestershire sauce, and cayenne pepper in a mixing bowl. Let the mixture stand for 1 minute to hydrate and evenly distribute the cayenne.
  2. Add 2 1/2 ounces of the blue cheese. Mash it into the vinegar mixture with a fork until a coarse paste forms.
  3. Add the mayonnaise, sour cream, buttermilk, honey, garlic powder, parsley, dill, and black pepper. Whisk until evenly combined.
  4. Crumble the remaining 2 1/2 ounces of blue cheese into the sauce. Fold gently to preserve noticeable pieces.
  5. Cover and refrigerate for at least 1 hour. For the best flavor and texture, refrigerate for 2 to 4 hours.
  6. Stir and taste after chilling. For additional heat, add cayenne pepper in very small pinches. For a thinner consistency, add buttermilk 1 teaspoon at a time. Add salt only if needed.
  7. Shortly before serving, combine 1 tablespoon honey with a small pinch of cayenne pepper. Warm for 5 to 10 seconds in the microwave, just until easily pourable.
  8. Spoon the sauce into a shallow serving bowl. Garnish with blue cheese crumbles and black pepper, then finish with a light drizzle of the spicy honey.

Cook’s Notes

  • Two tablespoons of honey creates noticeable sweetness without turning the sauce into a dessert-like dip. For a more savory result, reduce it to 1 1/2 tablespoons.
  • Begin with 1/8 teaspoon cayenne pepper. After chilling, increase it toward 1/4 teaspoon if you prefer a pronounced heat.
  • Do not add salt automatically. Blue cheese and Worcestershire sauce already contain significant salt.
  • Mashing 1/2 of the cheese creates a deeply flavored base; gently folding in the remainder preserves the chunky texture.
  • The finishing drizzle should be restrained. Its purpose is to emphasize the honey and provide visual appeal—not make the sauce excessively sweet.
  • Use 2 tablespoons of buttermilk for a thick chicken dip. Increase it to 3 or 4 tablespoons for wings or salad dressing.
  • Store tightly covered in the refrigerator and use within 4 days.
