Carter Family Recipes

An elegant no-bake appetizer featuring a buttery cracker-and-pecan crust topped with a creamy Cajun filling loaded with tender shrimp, fresh herbs, cucumber, lemon, and a gentle touch of heat. Finished with seasoned shrimp and fresh herbs, it makes a striking centerpiece for a cocktail party, holiday gathering, or Southern-inspired appetizer spread.

Ingredients

For the Crust

  • 1 cup finely crushed buttery crackers
  • 1/4 cup finely chopped toasted pecans
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon finely chopped fresh parsley
  • 1/4 teaspoon Cajun seasoning

For the Filling

  • 1/2 cup peeled, seeded, and finely diced cucumber
  • 1/8 teaspoon kosher salt
  • 6 ounces cooked, peeled, and deveined shrimp, thoroughly dried and roughly chopped
  • 1/2 teaspoon Cajun seasoning
  • 1 teaspoon fresh lemon juice
  • 12 ounces full-fat block-style cream cheese, softened
  • 1/4 cup sour cream
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Louisiana-style hot sauce
  • 1 small garlic clove, finely grated
  • 2 tablespoons finely minced shallot
  • 2 tablespoons finely chopped fresh chives
  • 1 tablespoon finely chopped fresh dill
  • 1 teaspoon finely grated lemon zest
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon Cajun seasoning, plus more to taste
  • 1/4 teaspoon smoked paprika
  • 1/8 teaspoon freshly ground black pepper

For the Garnish

  • 2 ounces cooked, peeled, and deveined shrimp, thoroughly dried
  • Cajun seasoning, as needed
  • Fresh lemon juice, as needed
  • Fresh dill
  • Chopped fresh chives
  • Thinly sliced green onions
  • Lemon wedges
  • Smoked paprika or Cajun seasoning

Preparation

  1. Prepare the Pan: Lightly coat a 6-inch springform pan or ring mold with nonstick cooking spray. Line the bottom with parchment paper. For easier removal and smoother sides, line the inside edge with acetate or a strip of parchment paper.
  2. Drain the Cucumber: Place the diced cucumber in a fine-mesh strainer and toss it with the kosher salt. Let it drain for 15 minutes. Transfer the cucumber to a clean kitchen towel or several layers of paper towels. Squeeze gently but thoroughly to remove as much moisture as possible. Set aside.
  3. Make the Crust: Combine the crushed crackers, toasted pecans, melted butter, parsley, and Cajun seasoning. Stir until all the crumbs are evenly moistened and the mixture holds together when pressed. Firmly and evenly press the mixture into the bottom of the prepared pan. Refrigerate while preparing the filling.
  4. Season the Filling Shrimp: Toss the chopped shrimp with 1/2 teaspoon Cajun seasoning and 1 teaspoon lemon juice. Set aside. Keep the whole shrimp reserved for the garnish covered and refrigerated without seasoning.
  5. Make the Filling: Place the softened cream cheese in a medium bowl and beat until completely smooth. Add the sour cream, Worcestershire sauce, hot sauce, garlic, shallot, chives, dill, lemon zest, 2 teaspoons lemon juice, 1/2 teaspoon Cajun seasoning, smoked paprika, and black pepper. Beat just until smooth and evenly combined.
  6. Add the Shrimp and Cucumber: Fold the thoroughly drained cucumber and seasoned chopped shrimp into the cream cheese mixture. Taste and adjust the Cajun seasoning, lemon juice, or hot sauce as desired. Remember that the Cajun flavor will become slightly more pronounced as the cheesecake chills.
  7. Assemble the Cheesecake: Spoon the filling over the chilled crust. Press it gently into the pan to eliminate air pockets, then smooth the top with an offset spatula or the back of a spoon.
  8. Chill: Cover and refrigerate for at least 4 hours. For the firmest texture, cleanest presentation, and best-developed flavor, refrigerate for 6 hours or overnight.
  9. Season the Garnish Shrimp: Shortly before serving, season the reserved whole shrimp lightly with Cajun seasoning and a few drops of fresh lemon juice.
  10. Unmold and Garnish: Run a thin knife around the cheesecake unless the pan was lined with acetate or parchment paper. Carefully remove the springform ring or ring mold. Arrange the seasoned shrimp over the top. Garnish with fresh dill, chives, green onions, and a light dusting of smoked paprika or Cajun seasoning.
  11. Serve: Allow the cheesecake to stand at room temperature for approximately 10 minutes before serving so the filling becomes easily spreadable.

Cook’s Notes

  • Use full-fat block-style cream cheese. Whipped or spreadable cream cheese will create a softer filling that may not hold its shape.
  • Thoroughly drying the shrimp and draining the cucumber are essential for preventing a watery filling.
  • Cajun seasoning blends vary considerably in salt and heat. Begin with the stated amount, taste the filling, and add more only if needed.
  • Additional salt may not be necessary because the crackers, shrimp, Worcestershire sauce, and Cajun seasoning all contribute salt.
  • For more heat, add another dash of hot sauce or a small pinch of cayenne pepper.
  • Do not season the garnish shrimp with lemon juice until shortly before serving. Prolonged exposure can make cooked shrimp firm or slightly chalky.
  • The cucumber may be omitted for a denser cheesecake with a more concentrated shrimp flavor.
  • The cheesecake can be assembled 1 day in advance. Add the shrimp and fresh-herb garnishes shortly before serving.
  • Refrigerate leftovers promptly and use them within 2 days.
  • Freezing is not recommended because the cucumber, sour cream, and cream cheese may release water after thawing.
