Warm, crisp tortillas filled with creamy peanut butter and ripe banana make a quick breakfast, snack, or simple dessert. A small pinch of salt balances the sweetness, while maple syrup or honey adds the finishing touch.
Ingredients
- 1/3 cup natural peanut butter, preferably chunky
- 4 (5-inch) corn or flour tortillas
- 1 large ripe banana, halved crosswise, then sliced lengthwise into thirds
- Kosher salt
- 2 teaspoons grapeseed or canola oil
- Pure maple syrup or honey, for serving
Instructions
- Heat a small 8- to 9-inch skillet over medium-high heat.
- Meanwhile, spread the peanut butter evenly over one side of each tortilla.
- Arrange the banana slices over 2 of the tortillas and sprinkle each with a small pinch of kosher salt.
- Top with the remaining tortillas, peanut butter side down. Press gently so the tortillas and filling adhere.
- Lightly brush both sides of each quesadilla with oil.
- When the skillet is hot, add 1 quesadilla. Cook until browned in spots and lightly crisp, about 2 minutes per side, flipping once.
- Transfer to a cutting board and repeat with the second quesadilla.
- Cut each quesadilla into halves or quarters and serve warm with a drizzle of pure maple syrup or honey.
Cook’s Notes
Tortillas: Either corn or flour tortillas work. Flour tortillas produce a softer, more pliable quesadilla, while corn tortillas provide a slightly crisper texture and more pronounced corn flavor.
Peanut Butter: Natural peanut butter works especially well, but stir it thoroughly before measuring if the oil has separated.
Bananas: Use a ripe but still firm banana. An overly soft banana can become difficult to keep inside the quesadilla during cooking.
Cooking: Keep an eye on the tortillas as they brown. Peanut butter and banana warm quickly, so the goal is primarily to crisp and lightly brown the tortillas without scorching them.
Serving Suggestions
Breakfast or Brunch: Serve with fresh berries or other sliced fruit.
Snack: Cut into quarters or wedges for an easy handheld snack.
Dessert: Serve warm with a light drizzle of maple syrup or honey.
