These soft, chewy pumpkin bars have the dense texture of a blondie rather than pumpkin cake. Browned butter adds nutty depth, brown sugar gives the bars a warm caramel flavor, and a thin espresso glaze brings the coffee forward enough to make the pumpkin-spice-latte flavor unmistakable without overwhelming the pumpkin.

Ingredients
Pumpkin Spice Bars
- 5 tablespoons unsalted butter
- 1 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1/2 cup pumpkin purée
- 1/4 cup neutral vegetable oil
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/2 teaspoon kosher salt
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
Espresso Glaze
- 1 teaspoon instant espresso powder
- 4 teaspoons whole milk
- 3/4 cup confectioners’ sugar
- 1/2 teaspoon vanilla extract
- Pinch of kosher salt
Instructions
Make the Pumpkin Spice Batter
- Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving enough overhang to lift the bars from the pan. Lightly grease the parchment.
- Melt the butter in a medium saucepan over medium heat. Continue cooking, swirling the pan occasionally, until the milk solids turn golden brown and the butter smells nutty, about 3–5 minutes.
- Remove the pan from the heat and stir in the brown sugar, granulated sugar, pumpkin purée, vegetable oil, cinnamon, ginger, nutmeg, cloves, and kosher salt.
- Return the pan to medium-low heat and cook for 2–3 minutes, stirring constantly, until the mixture is glossy and the sugar begins to dissolve. Do not allow the mixture to boil vigorously.
- Remove from the heat and let cool for about 10 minutes.
- Whisk in the egg and vanilla until smooth and fully incorporated.
- Add the flour and baking powder. Fold just until no dry streaks remain.
- Spread the batter evenly in the prepared pan.
Bake the Bars
- Bake for 32–36 minutes, until the top is set and a toothpick inserted near the center comes out with a few moist crumbs.
- Cool in the pan for 15 minutes, then lift the bars out with the parchment and transfer to a wire rack to cool completely.
Make the Espresso Glaze
- Stir the espresso powder into the milk until fully dissolved.
- Whisk in the confectioners’ sugar, vanilla, and kosher salt until smooth.
- Spread the glaze in a thin, even layer over the completely cooled bars.
- Let the glaze set for 20–30 minutes before cutting into 16 squares.
Cook’s Notes
Brown Butter: Browning the butter adds a toasted, nutty flavor that works especially well with pumpkin, warm spices, and espresso.
Pumpkin Purée: Use 100% pumpkin purée rather than pumpkin pie filling. Keeping the amount at 1/2 cup helps preserve a dense blondie-style texture rather than turning the bars cakey.
Espresso Powder: Instant espresso powder gives the glaze a stronger, cleaner coffee flavor than brewed coffee without adding excess liquid.
Do Not Overbake: The bars should remain soft and slightly dense in the center. Overbaking will make them more cake-like and dry.
Glaze Consistency: If the glaze is too thick, add milk 1 teaspoon at a time. If too thin, add a little more confectioners’ sugar.
Storage: Store covered at room temperature for up to 3 days or refrigerate for up to 5 days. Bring chilled bars to room temperature before serving for the best texture.
Serving Suggestions
Coffee or Espresso: The most natural pairing and a good way to reinforce the latte flavor.
Vanilla Ice Cream: Serve an unglazed or lightly glazed bar slightly warm with a small scoop.
Spiced Pumpkin Butter: Serve a small spoonful alongside an unglazed bar for an even stronger pumpkin flavor.
Beverage Suggestions
Freshly Brewed Coffee: A medium or dark roast balances the sweet glaze.
Cappuccino: Complements both the espresso glaze and the warm spices.
Cold Milk: A simple, creamy contrast to the coffee and pumpkin spice.
Unsweetened Chai Tea: Echoes the cinnamon, ginger, nutmeg, and cloves without adding more sweetness.
