This Thanksgiving Autumn Salad brings a fresh, crisp counterpoint to a traditional holiday meal. Mixed greens are layered with sweet-tart apple, ripe pear, dried cranberries, toasted pecans, creamy goat cheese, and thinly sliced red onion, then tossed with a bright apple cider–Dijon vinaigrette.
The combination is intentionally balanced rather than overly sweet. Apple cider vinegar and Dijon mustard provide enough acidity to cut through rich turkey, gravy, dressing, and mashed potatoes, while fruit, cranberries, and a touch of maple syrup reinforce the familiar flavors of Thanksgiving. Toasted pecans add a distinctly Southern touch and echo the pecans used throughout the Carter Family Recipes holiday collection.

Ingredients
Apple Cider–Dijon Vinaigrette
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon pure maple syrup
- 1 small garlic clove, finely grated or minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup extra-virgin olive oil
Salad
- 6 ounces mixed baby greens
- 1 crisp sweet-tart apple, such as Honeycrisp or Pink Lady
- 1 ripe but firm Bartlett or Anjou pear
- 1/3 cup dried cranberries
- 3/4 cup pecan halves or pieces
- 4 ounces goat cheese, crumbled
- 1/4 small red onion, very thinly sliced
- 1 teaspoon fresh lemon juice
Instructions
Prepare the Pecans
- Place the pecans in a dry skillet over medium-low heat.
- Toast for 4–6 minutes, stirring or tossing frequently, until fragrant and lightly browned. Watch carefully because pecans can burn quickly.
- Transfer the toasted pecans immediately to a plate and allow them to cool completely.
Make the Vinaigrette
- In a small bowl or jar, combine the apple cider vinegar, Dijon mustard, maple syrup, garlic, kosher salt, and black pepper.
- Slowly whisk in the olive oil until the vinaigrette is emulsified. If using a jar, cover tightly and shake vigorously until combined.
- Taste and adjust with a small additional splash of apple cider vinegar if you prefer a sharper vinaigrette.
Prepare the Fruit
- Quarter and core the apple and pear. Leave the skins on for color and texture.
- Cut the apple and pear into thin slices.
- Gently toss the sliced fruit with the lemon juice to slow browning.
Assemble the Salad
- Place the mixed greens in a large serving bowl or arrange them across a wide serving platter.
- Add the apple, pear, dried cranberries, toasted pecans, goat cheese, and red onion.
- Drizzle approximately half of the vinaigrette over the salad immediately before serving.
- Toss gently, adding additional vinaigrette as needed. The greens should be lightly coated rather than saturated.
- Serve immediately, passing any remaining vinaigrette at the table.
Cook’s Notes
- Dress at the last minute. The salad should be assembled shortly before dinner and dressed immediately before serving so the greens remain crisp.
- Prepare ahead: The vinaigrette can be made up to 3 days ahead and refrigerated. Bring it to room temperature and shake or whisk thoroughly before serving.
- Toast the pecans ahead: Toasted pecans can be prepared several days in advance and stored in an airtight container at room temperature.
- Fruit choice: Honeycrisp or Pink Lady apples are particularly good because they remain crisp and provide enough acidity to prevent the salad from becoming overly sweet. Anjou or Bartlett pears provide a softer texture without becoming mushy when properly ripe.
- Goat cheese: Use a mild, creamy goat cheese. The tanginess is important because it balances the sweeter fruit and cranberries.
- Red onion: Slice the onion paper-thin. If its flavor is too sharp, soak the slices in ice water for 10 minutes, drain thoroughly, and pat dry before adding them to the salad.
- The cranberry-and-pecan combination also appears elsewhere in the collection, including Cranberry and Pecan Couscous with Orange Vinaigrette, while the vinaigrette follows the same acid-mustard-oil structure used in Balsamic-Rosemary Vinaigrette.
Serving Suggestions
This salad is designed specifically to provide acidity, freshness, and crisp texture alongside rich Thanksgiving dishes.
Serve with Sous-Vide Turkey Breast With Crispy Skin, Pecan Dressing, mashed potatoes and turkey gravy.
Warm Dinner Rolls are an especially good accompaniment for a traditional Carter Family Thanksgiving meal.
For plating, use a large shallow platter rather than a deep bowl. Arrange some of the apples, pears, goat cheese, cranberries, and pecans over the top after tossing so the ingredients remain visible and attractive.
Beverage Suggestions
Nonalcoholic: Homemade Slow Cooker Apple Cider reinforces the apple and autumn flavors of the salad and is especially appropriate for Thanksgiving.
Unsweetened iced tea provides a clean, refreshing alternative that will not compete with the vinaigrette or sweeter elements of the meal.
Sparkling water with a slice of lemon or orange works particularly well when the entire Thanksgiving meal is rich.
Wine: A dry Riesling, Pinot Gris, or lightly oaked Chardonnay pairs well with the fruit, goat cheese, turkey, and cider vinaigrette without overpowering the salad.
Storage and Reheating
Store leftover undressed salad components separately whenever possible.
Mixed greens and prepared toppings may be refrigerated in airtight containers for up to 2 days, although sliced pears and apples are best the day they are cut.
Store the vinaigrette in a covered container in the refrigerator for up to 1 week. Allow it to come toward room temperature and whisk or shake before serving.
Once the salad has been dressed, it is best eaten immediately. Refrigerated dressed leftovers will soften substantially and are not recommended for long-term storage.
Reheating is not appropriate for this recipe.
Variations
Blue Cheese: Replace the goat cheese with crumbled blue cheese for a stronger, more savory salad.
Feta: Substitute feta cheese for a slightly firmer, saltier option.
Fresh Cranberries: For a sharper seasonal accent, finely chop a small amount of fresh cranberry and scatter it sparingly through the salad along with the dried cranberries.
Orange-Cider Vinaigrette: Replace 1 tablespoon of the apple cider vinegar with fresh orange juice and add 1/2 teaspoon finely grated orange zest.
Maple-Pecan Version: Toss the toasted pecans with 1 teaspoon maple syrup and a small pinch of salt during the final minute of toasting. Allow them to cool completely before adding them to the salad.
Apple-Only Version: Omit the pear and use 2 contrasting apples, such as one Honeycrisp and one Granny Smith, for an even crisper and more tart salad.
