A smooth, gently spicy cheese sauce featuring pepper Jack, Monterey Jack, and roasted green chiles. Balanced to complement rather than overwhelm delicate eggs, this sauce brings Southwestern flavor to chorizo, green chile, chicken fajita, and Tex-Mex omelettes. Sodium citrate helps maintain its creamy texture during refrigeration and reheating.

Cost: Level 2 Economical
Region / Ethnic Origin: Southwestern United States / Tex-Mex
Ingredients
1 cup whole milk
1/2 cup water
2 teaspoons sodium citrate (approximately 8 grams)
5 ounces pepper Jack cheese, freshly grated
3 ounces Monterey Jack cheese, freshly grated
2 tablespoons roasted green chiles, finely chopped and well drained
1/4 teaspoon ground cumin
1/8 teaspoon garlic powder
1 teaspoon fresh lime juice, optional
Kosher salt, if needed
Additional whole milk, as needed for reheating
Instructions
Combine the milk, water, and sodium citrate in a medium saucepan.
Heat over medium-low heat, whisking until the sodium citrate dissolves completely.
Bring the mixture to a gentle simmer, then reduce the heat to low.
Gradually add the pepper Jack and Monterey Jack cheeses, whisking until completely melted and smooth.
Stir in the roasted green chiles, cumin, and garlic powder.
Cook gently for 1–2 minutes to distribute the flavors, without allowing the sauce to boil vigorously.
Remove from the heat. If desired, stir in the lime juice, beginning with 1/2 teaspoon and tasting before adding the remainder.
Taste and adjust the seasoning. The sauce should be creamy, mildly spicy, and easily pourable.
Serve immediately or transfer to shallow containers for refrigeration.
Cook’s Notes
Control the heat: Pepper Jack varies in spiciness. Choose a mild variety when preparing sauce for a broad range of omelettes.
Drain the chiles: Excess moisture from canned or roasted green chiles can unnecessarily thin the sauce.
Smooth presentation: For an exceptionally refined finish, blend the completed sauce briefly with an immersion blender.
Lime juice: Use sparingly. Too much acidity can overpower the cheese and eggs.
Prepare ahead: Refrigerate in small containers so individual servings can be reheated without repeatedly heating the entire batch.
