A quick and satisfying stir-fry featuring tender chicken, crisp vegetables, and ramen noodles tossed in a savory sauce. This easy one-pan meal is perfect for a busy weeknight.

Ingredients

  • 6 boneless, skinless chicken thighs
  • 1 quart water
  • 1 teaspoon salt
  • 2 packages (3 ounces each) chicken-flavored ramen noodles, seasoning packets reserved
  • 1/4 cup canola oil
  • 2 cloves garlic, minced
  • 1 medium onion, thinly sliced
  • 2/3 cup celery, thinly sliced
  • 2 cups cabbage, thinly sliced
  • 1 cup carrots, thinly sliced
  • 1/4 cup chicken broth, warmed
  • Wide, crispy Oriental noodles, for garnish (optional)

Instructions

  1. Cut the chicken thighs into 1/2-inch strips.
  2. In a medium saucepan, bring the water and salt to a boil over high heat. Add the ramen noodles, reserving the seasoning packets. Stir to separate the noodles and cook for approximately 2 minutes. Drain and set aside.
  3. Heat the canola oil in a large, deep skillet or wok over medium heat. Add the garlic and onion and stir-fry for approximately 4 minutes, until the onion becomes translucent.
  4. Increase the heat to high. Add the chicken and stir-fry for approximately 6 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F.
  5. Push the chicken and onion mixture to the sides of the skillet. Add the carrots, celery, and contents of the reserved ramen seasoning packets to the center. Stir-fry for approximately 2 minutes.
  6. Add the cabbage and combine with the chicken and vegetables. Continue stir-frying for approximately 2 minutes.
  7. Add the cooked ramen noodles and warmed chicken broth. Toss everything together and cook for approximately 2 minutes, until the noodles are heated through and evenly coated with the seasonings.
  8. Serve immediately, garnished with crispy Oriental noodles, if desired.

Cook’s Notes

Chicken Substitutions: Boneless, skinless chicken breasts may be substituted for the chicken thighs. Cut into thin strips and avoid overcooking to keep the meat tender.

Additional Vegetables: Add one drained can of sliced water chestnuts for extra crunch.

Flavor Enhancement: Add 2 tablespoons of Viet Huong Fish Sauce along with the chicken broth for additional savory depth. Taste before adding any additional salt, as both the fish sauce and ramen seasoning contain sodium.

Noodle Preparation: Cook the ramen noodles just until they begin to soften. They will finish cooking when combined with the chicken, vegetables, and broth.

Serving Suggestions

Serve hot as a complete meal or accompany with steamed edamame, cucumber salad, or vegetable spring rolls. Garnish with thinly sliced green onions or toasted sesame seeds for additional flavor and texture.

Beverage Suggestions

Serve with chilled jasmine tea, unsweetened iced green tea, or sparkling water with a squeeze of fresh lime.

We cooked this for lunch today using chicken breasts. We added a can of water chestnuts and 2 Tablespoons Viet Huong Fish Sauce. The Fish Sauce adds a nice layer of flavors.
