Carter Family Recipes

This exceptionally moist banana bread hides a rich ribbon of lightly sweetened cream cheese beneath a buttery praline pecan streusel. Very ripe bananas, brown sugar, sour cream, and coconut oil create a tender crumb, while toasted pecans and caramelized brown sugar give the topping a crisp, nutty finish. It is rich enough for dessert but equally at home on a breakfast or brunch table.

Ingredients

Banana Bread

  • 1 large egg
  • 1/2 cup light brown sugar, packed
  • 1/4 cup coconut oil, melted and cooled slightly
  • 1/4 cup sour cream or plain Greek yogurt
  • 2 teaspoons vanilla extract
  • 1 cup mashed very ripe bananas, about 2 large bananas
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine salt

Cream Cheese Filling

  • 1 large egg
  • 4 ounces brick-style cream cheese, softened
  • 1/4 cup granulated sugar
  • 3 tablespoons all-purpose flour

Praline Pecan Streusel

  • 2 tablespoons all-purpose flour
  • 1 tablespoon light brown sugar, packed
  • 1 tablespoon granulated sugar
  • Pinch of fine salt
  • Pinch of ground cinnamon
  • 1 tablespoon unsalted butter, cold and cut into small cubes
  • 2 tablespoons finely chopped toasted pecans
  • 1 1/2 teaspoons light corn syrup

Instructions

Prepare the Banana Batter

  1. Preheat the oven to 350°F. Grease and flour a 9 × 5-inch loaf pan or coat thoroughly with floured baking spray.
  2. In a large bowl, whisk together the egg, brown sugar, melted coconut oil, sour cream, and vanilla until smooth and well combined.
  3. Stir in the mashed bananas until evenly incorporated.
  4. Add the flour, baking powder, baking soda, and salt. Fold gently with a spatula just until no dry streaks remain. Do not overmix.
  5. Spread about two-thirds of the banana batter evenly in the prepared loaf pan, gently working it into the corners.

Add the Cream Cheese Filling

  1. In a medium bowl, whisk together the egg, softened cream cheese, granulated sugar, and flour until completely smooth.
  2. Spoon the cream cheese mixture evenly over the banana batter. Gently smooth it into an even layer, keeping the filling slightly away from the sides of the pan when possible.
  3. Carefully spoon the remaining banana batter over the cream cheese filling. Gently spread it to cover the filling without disturbing the cream cheese layer.

Begin Baking

  1. Bake the loaf, without the streusel topping, for 25 minutes. While the loaf begins baking, prepare the streusel.

Prepare the Praline Pecan Streusel

  1. In a small bowl, combine the flour, brown sugar, granulated sugar, salt, and cinnamon.
  2. Add the cold butter and work it into the dry ingredients with a fork or your fingertips until coarse crumbs form.
  3. Add the toasted pecans and corn syrup. Toss gently until evenly combined and moist, irregular crumbs form. Keep the streusel cool until needed.

Add the Streusel and Finish Baking

  1. After the loaf has baked for 25 minutes, quickly remove it from the oven. Sprinkle the praline pecan streusel evenly over the partially set surface without pressing it into the bread.
  2. Immediately return the loaf to the oven and continue baking for 25–30 minutes, or until the banana-bread portion is fully baked and the streusel is golden brown and caramelized.
  3. If the streusel becomes deeply browned before the bread is finished baking, loosely tent the loaf with aluminum foil.
  4. Test for doneness by inserting a wooden pick into the banana-bread portion rather than directly through the cream cheese filling. It should come out without wet banana batter. A few moist crumbs are fine.
  5. Transfer the pan to a wire rack and cool for 15 minutes.
  6. Carefully remove the loaf from the pan and place it on the rack. Cool completely before slicing so the cream cheese filling can fully set.

Cook’s Notes

Bananas: Use very ripe bananas with heavily spotted or nearly black skins. They provide the strongest banana flavor, greater sweetness, and more moisture.

Coconut Oil: Refined coconut oil has a relatively neutral flavor, while unrefined coconut oil contributes a subtle coconut note. Canola or vegetable oil may be substituted.

Cream Cheese: Use brick-style cream cheese rather than whipped or spreadable cream cheese. Bringing it fully to room temperature helps produce a smooth filling.

Pecans: Toasting the pecans intensifies their flavor. Toast them in a dry skillet over medium-low heat for 3–5 minutes, stirring frequently, until fragrant. Cool completely before preparing the streusel.

Streusel: Keep the butter cold and leave the streusel in irregular crumbs rather than blending it into a uniform paste. This produces a more distinct, textured topping.

Why the Streusel Is Added Later: Adding the praline pecan streusel after the loaf has baked for 25 minutes allows the banana-bread surface to partially set and protects the brown sugar, corn syrup, and pecans from excessive browning during the relatively long baking time.

Doneness: Because the cream cheese filling remains moist, avoid testing directly through the center of the filling. Insert the wooden pick into an area of banana bread instead.

Browning: If the streusel becomes deeply browned during the final portion of baking, loosely tent the loaf with aluminum foil rather than reducing the oven temperature.

Slicing: Allow the bread to cool completely before slicing. A serrated bread knife produces clean slices without compressing the cream cheese layer.

Serving Suggestions

Serve the banana bread at room temperature or slightly warm for breakfast, brunch, dessert, or an afternoon snack.

Fresh strawberries, blueberries, raspberries, or sliced bananas provide a fresh contrast to the rich cream cheese filling and praline topping.

For brunch, serve with fresh fruit and softly scrambled eggs. For a more indulgent presentation, gently warm an individual slice and serve it with a small pat of salted butter.

Beverage Suggestions

Freshly brewed medium-roast coffee complements the toasted pecans, banana, brown sugar, and caramelized praline flavors particularly well.

Espresso or cappuccino provides a pleasant bitter contrast to the sweet topping.

For nonalcoholic alternatives, serve with cold milk, hot black tea, chai, or unsweetened iced tea.

Storage and Reheating

Because the bread contains a cream cheese filling, store the completely cooled loaf tightly covered in the refrigerator for up to 5 days.

For the best texture and flavor, allow refrigerated slices to stand at room temperature for 15–20 minutes before serving.

Individual slices may be warmed in the microwave for about 10–15 seconds. Avoid overheating, which can soften the streusel and make the cream cheese filling excessively hot.

For longer storage, wrap individual slices tightly and freeze for up to 2 months. Thaw overnight in the refrigerator or for several hours at room temperature.

Variations

Walnut Praline: Substitute an equal amount of toasted walnuts for the pecans.

Greek Yogurt: Substitute an equal amount of plain Greek yogurt for the sour cream.

Warm Spice: Add 1/4 teaspoon ground cinnamon and a small pinch of freshly grated nutmeg to the banana batter.

Mini Loaves: Divide the banana batter, cream cheese filling, and streusel proportionately among smaller loaf pans. Begin checking considerably earlier for doneness, and add the streusel once the tops of the smaller loaves are partially set.

We baked the bread yesterday adding approximately 1/2 cup of Praline Pecan Streusel for a topping. I will add the ingredients and instructions for the topping to the recipe.
