Ingredients

For the Pig Shots

  • 8 ounces softened cream cheese
  • 4 ounces sour cream
  • 1/4 cup shredded Colby Jack cheese
  • 1 1/2 Tablespoons sweet BBQ rub
  • 1 12-ounce package of kielbasa (pre-cooked)
  • 1 package thick-cut bacon (cut in half)
  • 20 pickled Jalapeño slices

For the Glaze

  • 1/4 cup maple syrup
  • 2 ounces bourbon
  • 2 Tablespoons honey

Procedure

  1. Prep the Pig Shots: Slice the kielbasa into 1/2-inch thick rounds.
  2. Wrap each kielbasa slice with half a strip of thick-cut bacon, securing it with a toothpick to form a “cup” shape.
  3. Prepare the Filling: In a medium bowl, combine the softened cream cheese, sour cream, shredded Colby Jack cheese, and BBQ rub. Mix well until smooth and creamy.
  4. Transfer the filling to a piping bag or a sandwich bag with the corner snipped off.
  5. Assemble the Pig Shots: Pipe the cream cheese filling into each bacon-wrapped kielbasa cup until 3/4 full.
  6. Top each cup with a slice of pickled Jalapeño.
  7. Smoke the Pig Shots: Preheat your smoker to 250°F.
  8. Arrange the assembled pig shots on the smoker grates and smoke for 1 hour.
  9. Increase the smoker temperature to 350°F and cook for an additional 30 minutes, or until the bacon is crispy and the filling is golden and puffed.
  10. Make the Glaze: While the pig shots are smoking, whisk together the maple syrup, bourbon, and honey in a small bowl.
  11. Glaze and Serve: During the last 5 minutes of smoking, brush the glaze generously over the pig shots.
  12. Remove from the smoker and discard the toothpicks.
  13. Brush with an additional layer of glaze just before serving for extra shine and flavor.
