Ingredients

  • 1/4 cup lard or coconut oil
  • 16 oz mushrooms, sliced
  • 1 medium onion, halved and sliced into half moons
  • 6 ounces pepperoni, divided
  • 1 small head of green cabbage
  • 24 oz marinara or tomato sauce of choice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 8 oz mozzarella cheese, sliced

Procedure

  1. Preheat & Sauté: Preheat your oven to 400°F. In a 12-inch oven-safe skillet, heat 1/4 cup of lard or coconut oil over medium-high heat. Add the sliced mushrooms, allowing them to brown for a few minutes before stirring. Continue sautéing for about 5 minutes or until they soften and release their moisture.
  2. Cook the Onions & Pepperoni: Add the sliced onion and cook for another few minutes. While this cooks, prepare the pepperoni: set aside one handful for topping, then chop the rest into bite-sized pieces. Add the diced pepperoni to the skillet with the mushrooms and onions, cooking for a few more minutes until the pepperoni releases its fat and crisps slightly.
  3. Prepare the Cabbage: While the other ingredients are cooking, prepare the cabbage. Slice it into quarters, remove the core, and thinly slice each quarter into strips, as you would for coleslaw. Cut these strips into thirds horizontally to make manageable pieces. Add all the cabbage to the skillet.
  4. Cook the Cabbage: Season the cabbage with a generous pinch of salt, turn the heat up to high, and stir occasionally. Allow the cabbage to cook down and release its moisture—this should take about 5-10 minutes. The cabbage should soften and shrink significantly.
  5. Add the Sauce & Spices: Once the cabbage has cooked down, add the tomato sauce, oregano, and garlic powder. Stir occasionally, allowing the sauce to thicken and flavors to meld for about 5 minutes. Taste and adjust seasoning as needed, adding more salt if necessary.
  6. Top & Bake: Turn off the heat. Flatten the cabbage mixture into an even layer in the skillet and top with sliced mozzarella cheese. Scatter the reserved pepperoni evenly over the cheese. Transfer the skillet to the oven and bake for 20 minutes, or until the cheese is melted and golden brown.
  7. Let it Rest & Serve: Once out of the oven, let the skillet rest for at least 10 minutes before serving. This allows the flavors to set and makes it easier to cut into portions. Serve it with a side of fresh salad, or for a tangy contrast, pair it with some sauerkraut.

Serving Suggestions

  • Classic Pizza Experience: Serve your skillet alongside a light, refreshing salad like a Greek salad with olives, cucumbers, and feta to balance the richness of the pizza.
  • Brunch Twist: Top each slice with a fried egg for a savory brunch option, adding extra richness to the dish.
  • Saucy Side: Serve with a bowl of marinated olives or pickled veggies for a tangy bite that complements the cheesy goodness of the skillet.

This cabbage pizza skillet is versatile, allowing you to mix and match toppings, and it makes a great meal prep dish too—perfect for leftovers the next day!
