Paired with a vibrant blackberry sauce that brings just enough tart-sweet contrast, this panna cotta delivers a cool finish that’s as soothing as it is sophisticated.
Ingredients
For the Panna Cotta:
- 1/2 cup whole milk
- 1 envelope (2 1/4 teaspoons) unflavored gelatin
- 1 cup heavy cream
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 1/2 cups well-shaken buttermilk
For the Blackberry Sauce:
- 2 cups fresh or frozen blackberries
- 1/4 cup granulated sugar
- 1 Tablespoon lemon juice
- Optional: 1/2 teaspoon lemon zest or 1 Tablespoon crème de cassis
Preparation
- Bloom the gelatin: In a small saucepan, pour the milk and sprinkle the gelatin evenly over the surface. Let sit for 5 minutes to soften.
- Heat the mixture: Warm the milk and gelatin over low heat, stirring constantly until the gelatin is fully dissolved. Do not let it boil.
- Add cream and sugar: Stir in the heavy cream, sugar, vanilla, and salt. Heat just until sugar is dissolved and mixture is warm. Remove from heat.
- Add buttermilk: Whisk in the buttermilk. Pour the mixture into six small ramekins or glasses.
- Chill: Refrigerate for at least 4 hours, or until fully set. Can be made 1–2 days ahead.
- Make the blackberry sauce: In a saucepan over medium heat, combine blackberries, sugar, and lemon juice. Simmer for 8–10 minutes until berries burst and the sauce thickens slightly. Strain if desired for a smooth finish. Cool to room temperature, then chill.
- Serve: Unmold panna cottas by dipping the ramekins briefly in warm water and inverting onto plates, or serve in-glass. Spoon blackberry sauce over the top.
