Carter Family Recipes

Ingredients

  • 300g fresh baby spinach (or 280g frozen spinach, thawed and drained)
  • 250g artichoke hearts (preferably marinated in oil and herbs), drained and roughly chopped
  • 75g aged smoked gouda, finely grated
  • 75g Parmigiano-Reggiano, finely grated (60g for base, 15g for topping)
  • 100g low-moisture mozzarella, finely shredded
  • 150g crème fraîche (or cultured sour cream)
  • 100g house-made mayonnaise (or quality full-fat mayonnaise)
  • 120g cream cheese, softened
  • 3 garlic cloves, confit or roasted, finely minced
  • Zest of 1 organic lemon (about 1 teaspoon )
  • 1/2 teaspoon ground toasted coriander seeds
  • 1/4 teaspoon Espelette pepper or mild red pepper flakes*
  • 4 scallions (greens only), finely sliced
  • 5g kosher salt (or to taste)
  • Freshly cracked black pepper (to taste)
  • Extra-virgin olive oil, for finishing
  • House-made pita crisps or lavash, to serve

Procedure

  1. Prepare spinach: For fresh spinach: Wilt in salted boiling water (5 seconds), shock in ice water, drain, and squeeze dry. Finely chop. For frozen spinach: Thaw, squeeze dry, and finely chop.
  2. Combine base: In a stainless steel mixing bowl, fold together spinach, artichoke hearts, gouda, 60g Parmesan, 50g mozzarella, crème fraîche, mayonnaise, cream cheese, garlic, lemon zest, coriander, Espelette pepper, scallions, salt, and black pepper.
  3. Portion and bake: Portion the mixture into individual cast iron cocottes, ramekins, or a single elegant gratin dish.
  4. Finishing touches: Drizzle a few drops of extra-virgin olive oil over the gratin. Garnish lightly with micro herbs (e.g., chervil or micro basil) or a whisper of lemon zest for freshness.
  5. Serve: Accompany with house-made pita crisps, lavash shards, or griddled baguette slices — brushed lightly with olive oil and sea salt.

Chef’s Notes

  • Spinach: Use young Bloomsdale spinach or another delicate varietal for exceptional texture and sweetness.
  • Artichokes: Opt for confit or marinated artichoke hearts to introduce subtle herbal complexity.
  • Cheeses: Source raw-milk aged gouda and 24-month Parmigiano-Reggiano for maximum depth.
  • Texture balance: Aim for a luscious, spoonable consistency—not dense. Loosen gently with a splash of warm cream if necessary before service.
  • For a medium-heat substitute for Espelette pepper, use:
    • 1/2 teaspoon smoked paprika
    • 1/4 teaspoon red pepper flakes
  • Adjust the red pepper flakes depending on your heat preference. If you want it slightly spicier, you can increase the red pepper flakes to 1/2 teaspoon. This combination gives a nice balance of flavor and heat similar to Espelette without being too overpowering

Cook’s Note

For a flavorful shortcut, you can substitute the lemon zest and kosher salt with 1 to 1 1/2 teaspoons of Fiesta Lemon Pepper seasoning. It adds bright citrus notes and balanced saltiness, complementing the creamy base and savory cheeses beautifully. Start with 1 teaspoon and adjust to taste before baking or serving. This swap keeps things simple without sacrificing flavor.

Plating Concept: Minimal Elegance with Textural Contrast

Main Elements

  1. Gratin Vessel: Use a small black cast iron cocotte (about 4–5 inches in diameter) or an elegant white porcelain ramekin with clean lines. The contrast between rustic (cast iron) and modern minimalism works beautifully. The dip should come just to the rim, with the top golden and slightly blistered from the oven or broiler.
  2. Accompaniment Plate: Use a round white porcelain plate (9–10 inches), matte or glossy, with wide rims and no pattern. Simplicity highlights the food.
  3. Garnishes: Lightly scatter micro herbs (micro chervil, micro basil, or micro parsley) on the bubbling top of the gratin for freshness and color contrast.
  4. Just before serving, drizzle 4–5 drops of extra-virgin olive oil over the surface for gloss.

Assembly Sequence (for precision plating).

  1. Gratin: Remove gratin from oven and rest 2–3 minutes. Ensure bubbling has settled but surface is still molten. Garnish with micro herbs + olive oil drizzle.
  2. Accompaniments: Place crisps on the left side of the white plate (fan or teepee lean).
  3. Final Touches: Wipe rims of the cocotte and plate with a clean towel. Place a folded linen napkin or slate coaster beneath the cocotte to anchor it visually and protect the diner’s hands.
