This rich, flourless chocolate torte is a study in balance—deep, dark chocolate meets the subtle warmth of chili for a finish that’s bold yet refined. The torte’s dense, truffle-like texture delivers pure indulgence in every bite, while the touch of heat lingers just enough to intrigue the palate. A nod to Jalapeño spice and Latin flair, this dessert is ideal for those who like their sweets with a sultry edge. A small slice truly satisfies.
Ingredients
For the Torte:
- 8 ounces bittersweet chocolate (70% cacao), chopped
- 1/2 cup unsalted butter, cubed
- 3/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground cayenne or chili powder (adjust to heat preference)
- 3 large eggs
- 1/3 cup unsweetened cocoa powder
For the Chili Dust:
- 1 teaspoon cocoa powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon smoked paprika
- 1 Tablespoon powdered sugar
Optional Garnish:
- Smoky Mezcal Whipped Cream
- Whipped cream or crème fraîche
- Fresh berries
- Candied Jalapeño slice (for adventurous plating)

Preparation
- Preheat & Prepare Pan: Preheat oven to 375°F. Grease an 8-inch round cake pan and line the bottom with parchment paper.
- Melt Chocolate & Butter: In a heatproof bowl set over simmering water, melt the chocolate and butter together. Stir until smooth, then remove from heat.
- Build the Batter: Whisk in the sugar, salt, vanilla, cinnamon, and chili powder. Add eggs one at a time, whisking well after each. Sift in the cocoa powder and stir until just combined.
- Bake: Pour batter into prepared pan and smooth the top. Bake for 20–25 minutes, or until the center is just set. Let cool in pan for 10 minutes, then invert onto a plate. Chill for 1 hour or more before serving.
- Make Chili Dust: In a small bowl, mix the cocoa powder, cayenne, smoked paprika, and powdered sugar. Lightly sift over each slice before serving.
Cook’s Notes
Serve thin slices with unsweetened whipped cream to tame the heat and highlight the chocolate. Store leftovers tightly wrapped in the fridge for up to 5 days.
