Ingredients
- 1 large green cabbage, outer leaves discarded and core removed
- 4 Tablespoons unsalted butter, softened
- 1 Tablespoon Old Bay seasoning
- 1 Tablespoon Cajun seasoning
- 2 Tablespoons smoked paprika
- 1 Tablespoon garlic and herb butter (such as Kinder’s)
- 1 Tablespoon caramelized onion butter (such as Kinder’s)
- Optional: 6–8 slices bacon for topping
Preparation
- Preheat oven to 385°F.
- Trim outer leaves from cabbage and cut out the core to form a hollow cavity.
- Fill cavity with softened butter. Add garlic and herb butter and caramelized onion butter.
- Rub any remaining butter over the outside of the cabbage.
- Combine Old Bay, Cajun seasoning, and smoked paprika. Sprinkle mixture generously over the cabbage, letting it fall between the layers.
- Wrap cabbage tightly in heavy-duty aluminum foil.
- Roast for 2 hours, until cabbage is fork-tender. Carefully unwrap foil, watching for hot steam.
- Slice into wedges and serve hot with your choice of sides or protein.
Optional Variation
- After 1 1/2 hours of roasting, unwrap the cabbage, drape bacon slices across the top, and return to the oven uncovered.
- Roast an additional 10–20 minutes until bacon is crisp.
