Carter Family Recipes

This Lemon Curd Mousse is a bright and airy dessert that perfectly balances tart and sweet. The smooth, citrusy flavor of lemon curd is gently folded into Marshmallow Whipped Cream, creating a luxurious texture that’s both light and luscious. It’s a simple yet elegant treat — perfect served in individual cups, garnished with lemon zest, berries, or a small cookie on the side.

Ingredients

  • 1 cup lemon curd (homemade or high-quality store-bought)
  • 2 cups Marshmallow Whipped Cream
  • 1 teaspoon pure vanilla extract
  • 1 Tablespoon granulated sugar (optional, for extra sweetness)
  • Fresh berries or lemon zest, for garnish

Preparation

  1. Prepare the Lemon Curd: If using homemade lemon curd, make sure it’s completely cooled before combining.
  2. For store-bought curd, whisk briefly to loosen it to a silky consistency.
  3. Combine Flavors: In a large bowl, whisk the lemon curd, vanilla extract, and sugar (if using) until smooth and glossy.
  4. Fold in the Whipped Cream: Add one-third of the Marshmallow Whipped Cream to the curd mixture and whisk gently to lighten it.
  5. Using a spatula, fold in the remaining whipped cream in two additions, turning the bowl and lifting gently to maintain airiness.
  6. Chill and Set: Spoon the mousse into small glasses, ramekins, or dessert cups.
  7. Refrigerate for at least 2 hours, or until lightly set and chilled through.
  8. Serve and Enjoy: Garnish with a few fresh berries, a twist of lemon zest, or a small shortbread cookie.
    • Serve cold and savor each delicate spoonful.
