  • 1/2 cup onion, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Oil for cooking

Sausage Gravy

  • 8 ounces breakfast sausage
  • 2 1/2 cups heavy cream
  • 2 Tablespoon flour
  • 1 teaspoon salt
  • 1 teaspoon pepper

Honey Butter Biscuit Topping

  • 1 (11.36-ounce) box Red Lobster Honey Butter Biscuit mix
  • 3/4 cup milk

Honey Butter

  • 1/2 stick butter, softened
  • 1 Tablespoon honey
  • Pinch of salt

Fluffy Eggs

  • 6–7 large eggs, beaten
  • 2 Tablespoon unsalted butter
  • 1 Tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Preparation

  1. Sautéed Veggies: In a skillet over medium heat, add oil, chopped bell peppers, and onions. Season with salt and pepper. Cook for 3–4 minutes, stirring occasionally, until lightly browned. Set aside.
  2. Sausage Gravy: In the same pan, cook the breakfast sausage, breaking it into small pieces as it browns, about 5–6 minutes.
  3. Sprinkle in the flour and stir to coat the sausage. Gradually add heavy cream, stirring constantly, then season with salt and pepper.
  4. Simmer 2–3 minutes until thickened. Remove from heat and set aside.
  5. Honey Butter Biscuit Topping: In a bowl, combine the dry biscuit mix and milk. Stir gently with a fork just until a soft, shaggy dough forms. Do not overmix.
  6. Honey Butter: In a small bowl, mix the softened butter, honey, and a pinch of salt. Set aside.
  7. Fluffy Eggs: Melt butter and olive oil in a skillet over low heat. Add beaten eggs and stir gently with a spatula until soft curds begin to form.
  8. Season with salt and pepper.
  9. Continue cooking just until glossy and slightly underdone.
  10. Assemble: Preheat oven to 425°F.
  11. In each ramekin, layer fluffy eggs, sautéed veggies, shredded cheddar, and sausage gravy.
  12. Top with a portion of biscuit dough, spreading evenly.
  13. Arrange ramekins on a baking sheet and bake 18–20 minutes, until biscuit tops are golden brown.
  14. Brush with honey butter immediately after baking.
  15. Serve warm and enjoy the perfect balance of savory and sweet in every bite.
