This Cottage Cheese Garlic Butter Flatbread is tender, lightly crisped, and brushed generously with fragrant garlic butter. Cottage cheese gives the dough a soft, protein-rich interior while keeping it pleasantly chewy. Finished with golden brown skillet marks and fresh herbs, this flatbread works equally well as a side for soups, a base for wraps, or torn and dipped straight from the plate.

Ingredients

Flatbread Dough

  • 1 cup cottage cheese
  • 1 1/2 cups all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt

Garlic Butter

  • 3 Tablespoon butter
  • 2 teaspoon minced garlic
  • 1 Tablespoon fresh parsley, finely chopped
  • 1/4 teaspoon black pepper

Preparation

  1. In a large bowl, combine the flour, baking powder, and salt. Stir to distribute evenly.
  2. Add the cottage cheese and mix until a rough dough forms. If the dough feels dry, knead gently in 1–2 additional Tablespoon of cottage cheese until soft and cohesive.
  3. Turn the dough onto a lightly floured surface and knead briefly, about 30–45 seconds, just until smooth.
  4. Cover and allow the dough to rest for 10 minutes. This relaxes the gluten and makes shaping easier.
  5. Divide the dough into 4–6 equal portions. Roll each portion into a thin round or oval, approximately 1/8” thick.
  6. Heat a dry skillet over medium-high heat. Cook each flatbread for 2–3 minutes per side, until golden brown with darker toasted spots.
  7. In a small saucepan, melt the butter over medium-low heat. Add the garlic and cook for 30–60 seconds, just until fragrant. Remove from heat and stir in parsley and black pepper.
  8. Brush the warm flatbreads generously with the garlic butter. Serve immediately.
