Carter Family Recipes

This Texas twist on Million Dollar Crockpot Pasta turns up the attitude with bold Southwest flavors and a gentle heat that builds without overpowering the dish. Savory beef is seasoned Tex-Mex style, Jalapeño adds just enough bite, and pepper jack joins mozzarella for a richer, more assertive finish. The signature creamy layer stays indulgent and comforting, but the flavor profile shifts from Italian-inspired to slow-cooked Texas comfort — perfect for feeding a crowd that expects their food to have a backbone.

Ingredients

  • 2 pounds ground beef
  • 16 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup ricotta cheese
  • 1 teaspoon minced garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 Jalapeño, finely diced and seeded
  • 48 ounces fire-roasted tomato pasta sauce, divided
  • 24 ounces water
  • 16 ounces corkscrew-style pasta (cavatappi, cellentani, or macaroni)
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded pepper jack cheese
  • Salt and black pepper, to taste

Preparation

  1. In a skillet over medium heat, cook the ground beef with salt and black pepper until browned. Add cumin, chili powder, smoked paprika, garlic, and diced Jalapeño. Stir well and cook for 1–2 minutes until fragrant. Drain excess grease and set aside.
  2. In a mixing bowl, combine the softened cream cheese, sour cream, and ricotta cheese. Stir until smooth.
  3. Spread a thin layer of fire-roasted tomato sauce in the bottom of the crockpot.
  4. Add half of the uncooked pasta evenly over the sauce.
  5. Pour half of the remaining sauce over the pasta, followed by half of the water.
  6. Add half of the seasoned ground beef.
  7. Spoon the entire cream cheese mixture evenly over the beef layer without stirring.
  8. Add the remaining pasta, then pour over the remaining sauce and water.
  9. Top with the remaining seasoned beef.
  10. Cover and cook on LOW for 2–3 hours, checking at the 2-hour mark to ensure the pasta is tender.
  11. Gently stir to incorporate the creamy layer.
  12. Sprinkle mozzarella and pepper jack evenly over the top. Cover and cook until the cheese is fully melted.
  13. Serve hot.

Texas Notes

  • For extra heat, leave the Jalapeño seeds in or add 1/2 teaspoon cayenne.
  • Ground Texas hot sausage can replace half the beef for a deeper flavor.
  • Finish with chopped cilantro or sliced green onions if serving guests — optional, but very Texas.

Preparation — Instant Pot Method

  1. Select Sauté on the Instant Pot. Add the ground beef, season with salt and black pepper, and cook until fully browned. Add the cumin, chili powder, smoked paprika, minced garlic, and diced Jalapeño. Stir and cook for 1 minute until fragrant. Turn off Sauté and drain excess grease if needed.
  2. Stir in all of the spaghetti sauce and water, scraping the bottom of the pot to remove any browned bits.
  3. Add the uncooked pasta, pressing it down gently so it is mostly submerged in the liquid. Do not stir.
  4. Spoon the cream cheese, ricotta cheese, and sour cream evenly over the top of the pasta. Do not mix.
  5. Secure the lid and set the valve to Sealing. Cook on Manual / Pressure Cook (High) for 5 minutes.
  6. When cooking time is complete, allow a 10-minute natural release, then carefully perform a quick release of any remaining pressure.
  7. Remove the lid and gently stir until the creamy layer is fully incorporated and the sauce is smooth.
  8. Sprinkle the mozzarella and pepper jack evenly over the top. Close the lid and let the residual heat melt the cheese for 2–3 minutes.
  9. Serve hot.

Instant Pot Notes

  • If the pasta seems slightly loose after stirring, let it rest uncovered for 5 minutes — it will thicken.
  • Avoid stirring before pressure cooking to prevent a burn notice.
  • For extra Texas heat, finish with sliced Jalapeño or a dash of hot sauce right before serving.

Baked Finish

  1. After the Instant Pot cooking and stirring step, transfer the pasta to a greased 9 × 13 baking dish.
  2. Sprinkle an additional 1/2–1 cup shredded mozzarella and pepper jack over the top.
  3. Bake uncovered at 400°F for 10–15 minutes, until bubbly and lightly golden.
  4. For a deeper crust, broil for the final 1–2 minutes, watching closely.
  5. Let rest 5 minutes before serving.

Texas Finishing Touches (Optional but On-Brand)

  • Top with sliced Jalapeño, green onions, or chopped cilantro
  • Serve with garlic Texas toast or cast-iron cornbread
  • Add a drizzle of hot honey or Texas-style BBQ sauce if you’re feeling bold
