This simple Cottage Cheese Bread is a high-protein, low-carb bread alternative made with just eggs and cottage cheese. Blended smooth and baked until lightly golden, it creates a soft, flexible bread that works well for sandwiches, wraps, toast, or even as a flatbread base. Mild in flavor, quick to prepare, and endlessly customizable, it’s perfect for everyday meals or easy meal prep.
Ingredients
- 2 large eggs
- 1 cup cottage cheese (full-fat, reduced-fat, or fat-free — low-sodium works best)
- 3/4 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Oregano or other seasoning for topping
Preparation
- Preheat oven to 350°F (175°C). Line a baking sheet or small loaf pan with parchment paper.
- In a blender or food processor, add the cottage cheese and eggs. Blend until completely smooth, with no visible lumps.
- Add garlic powder and Italian seasoning if using, and blend briefly to combine.
- Pour the batter onto the prepared baking sheet and spread evenly, or into a loaf pan for thicker slices.
- Bake for 30–35 minutes, or until the bread is set, lightly golden, and firm to the touch. Thicker loaves may take up to 45 minutes.
- Remove from the oven and allow to cool completely before slicing or removing from parchment.
- Optionally, sprinkle oregano or other topping before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet, toaster oven, or oven for best texture.
Variations
Texas-Style Savory
- Add 1 small diced Jalapeño and 1/4 teaspoon smoked paprika to the batter.
- Optional: fold in 1/4 cup shredded cheddar cheese before baking for a spicy, smoky twist.
For Wrap Slices
- Pour batter into a small loaf pan instead of a baking sheet for thicker bread.
- Slice into sandwich-sized portions once cooled. Great for wraps or stacked sandwiches.
Sweet Breakfast Variation
- Omit garlic powder, Italian seasoning, and oregano from the batter.
- Add 1–2 teaspoons cinnamon and 1–2 teaspoons maple syrup or honey.
- Optional: fold in 1/4 cup blueberries or raisi
