Ingredients
Ribs & Dry Rub
1 rack baby back ribs (1–1/2 lbs)
2 Tablespoon brown sugar
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon smoked paprika
1 teaspoon black pepper
1 teaspoon salt
1 teaspoon sesame seeds
1/2 teaspoon Korean chili flakes (gochugaru, optional for spice)
Instant Pot Liquid
1 cup apple cider vinegar (or water)
1 teaspoon liquid smoke
Optional Glaze
1 Tablespoon soy sauce
1 Tablespoon honey
1 Tablespoon liquid smoke
1/2 Tablespoon sesame oil
1 teaspoon gochujang (optional, for mild spice)
Preparation
- Prep Ribs: Remove the silver skin from the back of the ribs for tender results.
- Mix all dry rub ingredients in a small bowl.Massage the dry rub evenly on both sides of the ribs. Let rest 30 minutes at room temperature or refrigerate up to 4 hours.
- Instant Pot Cooking: Pour 1 cup apple cider vinegar (or water) into the Instant Pot. Add 1 teaspoon liquid smoke.
- Place the trivet in the pot and lay ribs on top (do not submerge)
- Seal and cook on High Pressure for 25–30 minutes: (25 minutes for tender but intact ribs — 30 minutes for fall-off-the-bone tenderness
- Allow Natural Release for 10 minutes, then quick release remaining pressure carefully.
- Air Fryer Finish: Preheat the air fryer to 400°F.
- Optionally brush ribs with glaze (soy sauce + honey + sesame oil + gochujang).
- Place ribs in the air fryer basket and cook 6–8 minutes until caramelized and slightly crisp. Flip halfway through for even browning.
- Serving: Slice between bones.
- Garnish with sesame seeds and sliced green onions.
- Serve with steamed rice, kimchi, or lettuce wraps for a full Korean BBQ experience.
Cook’s Notes
- Dry rub works perfectly with this method because the Instant Pot ensures the ribs stay juicy. The air fryer finish provides the crispy, caramelized exterior typical of Korean BBQ.
- Use apple cider vinegar for tang and tenderizing effect; liquid smoke adds smoky flavor without a grill.
- Can easily scale to 2 racks; cook in batches in the air fryer if needed.
Serving Suggestions
- Traditional Korean Style: Serve with steamed white rice and a variety of banchan (small side dishes) like kimchi, pickled radish, and spicy cucumber salad.
- Lettuce Wraps: Offer fresh lettuce leaves for wrapping ribs along with rice, sliced garlic, and ssamjang (Korean dipping paste) for a hands-on, interactive meal.
- Family-Style Platter: Arrange ribs on a large platter with garnishes of sliced green onions and sesame seeds. Surround with small bowls of dipping sauces like gochujang-honey glaze, soy-sesame sauce, or spicy vinegar sauce.
- Casual Comfort: Serve with roasted or air-fried vegetables like carrots, broccoli, or bell peppers for a simple, hearty dinner.
