Fluffy long-grain white rice cooked in the Instant Pot with butter or oil, finished with fresh lime juice, lime zest, and bold Fiesta Lime Pepper. Slightly firmer texture with maximum lime flavor — perfect for tacos, grilled meats, and Tex-Mex bowls.
Ingredients
- 2 cups long-grain plain white rice, rinsed
- 2 cups water
- 1 teaspoon salt
- 1 Tablespoon olive oil or 1 Tablespoon butter
- 1 Tablespoon Fiesta Lime Pepper (adjust to taste)
- Zest of 2 limes
- 5–6 Tablespoons fresh lime juice (about 2–3 limes)
- 1/3–1/2 cup fresh cilantro, finely chopped
Preparation
- Rinse the Rice: Rinse rice under cold water until the water runs mostly clear. Drain well.
- Combine in Instant Pot: Add rinsed rice, water, salt, olive oil or butter, and Fiesta Lime Pepper to the Instant Pot. Stir gently to combine.
- Pressure Cook: Close and lock the lid. Set the valve to Sealing.
Pressure cook on High for 3 minutes. - Natural Release: Let the pressure release naturally for 10–12 minutes, then carefully switch to Venting to release any remaining pressure.
- Double Lime Finish: Fluff rice with a fork. Stir in all lime zest and lime juice, then fold in chopped cilantro. Taste and sprinkle extra Fiesta Lime Pepper if desired.
- Serve: Serve immediately while warm.
Cook’s Notes
- Using 2 cups water yields slightly firmer, separate grains without being dry.
- Zest gives aromatic lime flavor; juice adds tangy brightness.
- Butter or oil keeps grains separate and adds subtle richness.
- Adjust Fiesta Lime Pepper to taste for extra zing.
- Leftovers reheat with a splash of water to restore moisture.
