Crisp okra spears pickled in a sweet-heat brine with garlic, Jalapeño, and chili flakes. The goal is bright acidity, noticeable sweetness, and a clean back-end heat—never mushy.
Ingredients
- 1 lb fresh okra (3–4 inches long, tender pods)
- 1 cup white vinegar (5% acidity)
- 1 cup apple cider vinegar
- 1 cup water
- 1/2 cup granulated sugar
- 1 Tablespoon kosher salt
- 3 cloves garlic, lightly crushed
- 1 Jalapeño, sliced lengthwise
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon mustard seed
- 1/2 teaspoon black peppercorns
- 1/4 teaspoon turmeric (optional, for color)
- 1 bay leaf
Preparation
- Prep the okra: Rinse and trim stems without cutting into the pods. Keep pods whole for best texture.
- Pack the jars: Place garlic, Jalapeño, spices, and bay leaf in clean jars. Tightly pack okra upright.
- Make the brine: Combine vinegar, water, sugar, and salt in a saucepan.
- Fill: Pour hot brine over okra, fully covering. Remove air bubbles and seal.
- Cool & cure: Cool to room temperature. Refrigerate at least 7 days before eating. Flavor improves for 2–3 weeks.
Cook’s Notes
- Smaller okra = crisper results.
- Do not puncture or slice okra; slime increases dramatically.
- If shelf-stable canning is desired, acidity must be verified and processed properly.
