A classic French omelette is soft, pale, and delicately custardy — never browned, never overfilled. This version uses a lightly diluted spinach artichoke dip as a subtle, savory accent. The eggs remain the star, while the creamy filling adds richness without overwhelming the texture. Precise temperature control on induction ensures a silky interior and a smooth, elegant exterior.

Ingredients

For the Omelette:

  • 3 large Eggs (about 150 g without shells)
  • 1 Tablespoon Unsalted Butter
  • 1 Tablespoon Heavy Cream (optional, for added tenderness)
  • Freshly Ground Black Pepper, to taste

For the Filling:

  • 20 g Spinach Artichoke Dip
  • 10 g Crème Fraîche, Ricotta, or Heavy Cream
  • 1 teaspoon Fresh Lemon Juice (optional)

Preparation

  1. Prepare the Filling: In a small bowl, stir together the spinach artichoke dip and crème fraîche (or ricotta or cream) until smooth. Add lemon juice if using. Set aside.
  2. Preheat the Skillet: Heat a 12-inch nonstick skillet over medium-low heat.
On induction using a Breville Control Freak, set Pan Control to 250°F (121°C).
Add the butter and allow it to melt and foam without browning.
  3. Whisk the Eggs: Whisk the eggs thoroughly until completely combined. Whisk in the heavy cream if using. Do not add salt.
  4. Cook the Eggs: Pour the eggs into the skillet. Immediately begin stirring continuously with a rubber spatula while gently shaking the pan.
Continue stirring for 30–45 seconds until small, delicate curds form and the eggs thicken to a soft custard consistency.
  5. Stop at the Glossy Stage: When the eggs are mostly set but still slightly glossy on top, stop stirring. Smooth the surface gently with the spatula.
  6. Add the Filling: Spoon approximately 25 g of the filling mixture in a thin line slightly below the center of the omelette. Do not spread it across the entire surface.
  7. Roll the Omelette: Reduce heat slightly if desired (to about 220°F on induction).
  8. Tilt the pan away from you and fold the top third of the omelette down over the filling. Continue gently rolling toward the edge of the pan.
Invert the omelette seam-side down onto a warm plate.
  9. Finish and Serve: Sprinkle lightly with freshly ground black pepper. Serve immediately.

Cook’s Notes

  • The ideal filling ratio is 20–25 g for 3 eggs. Exceeding 35 g may cause the omelette to split.
  • The exterior should remain pale yellow with no browning.
  • The interior should be soft and custardy, not runny and not dry.
  • If the butter browns, the pan is too hot — reduce the temperature before adding eggs.
  • Serve with lightly dressed greens and crusty bread. A dry sparkling wine or a light Sauvignon Blanc pairs well.
