This Limoncello Cream Pie is a cool, no-bake dessert that blends silky vanilla ice cream with bright lemon zest, smooth lemon curd, and a splash of limoncello for a refined citrus finish. Nestled in a buttery graham cracker crust and topped with a cloud of white chocolate–lemon cream, it’s rich yet refreshing. The balance of sweet creaminess and vibrant lemon makes it ideal for warm-weather gatherings or as an elegant finish to a dinner party.
Ingredients
- 1 (9-inch) graham cracker crust
- 1 quart vanilla ice cream, softened
- 3 Tablespoon limoncello liqueur
- 1 teaspoon finely grated lemon zest
- 1/3 cup lemon curd, divided
- 6 ounces white baking chocolate, finely chopped
- 1 cup heavy whipping cream, divided
- 1/4 cup marshmallow creme
- Additional lemon zest for garnish (optional)
Preparation
- In a large mixing bowl, combine the softened vanilla ice cream, limoncello, lemon zest, and 1/2 of the lemon curd. Stir gently until smooth and evenly blended.
- Spoon the mixture into the graham cracker crust and smooth the top with a spatula. Cover and freeze for at least 4 hours or until firm.
- In a microwave-safe bowl, combine the white chocolate and 1/4 cup of the heavy whipping cream. Heat in 20-second intervals, stirring between each, until melted and smooth. Let cool to room temperature.
- In a chilled bowl, beat the remaining heavy whipping cream until soft peaks form. Add the marshmallow creme and the remaining lemon curd. Beat just until combined and slightly thickened.
- Fold half of the whipped cream mixture into the cooled white chocolate mixture until incorporated. Gently fold in the remaining whipped cream mixture until smooth and uniform.
- Spread or pipe the topping over the frozen pie. Return to the freezer for 1 hour to set.
- Let the pie stand at room temperature for 10 minutes before slicing. Garnish with additional lemon zest if desired.
Cook’s Notes
- For a more pronounced citrus flavor, increase the lemon zest to 1 1/2 teaspoon.
- If you prefer a firmer topping, chill the assembled pie for an additional 1–2 hours before serving.
- To make an alcohol-free version, substitute fresh lemon juice and 1/2 teaspoon lemon extract for the limoncello.
- Store covered in the freezer for up to 3 days for best texture.
