This viral Huevos Aguachile is a fresh, zesty, and healthy Mexican egg salad that’s high in protein and perfect for keeping you full and energized. The combination of hard-boiled eggs, Serrano peppers, tangy citrus, and fresh cilantro creates a bright, flavorful salad with just the right kick. Ideal for meal prep, light lunches, or a protein boost after a workout.
Ingredient
- 8 hard-boiled eggs
- 1 red or white onion, sliced
- 4 Serrano peppers, thinly sliced (substitute with Jalapeño for milder heat)
- 1/4 cup cilantro, chopped
- 3/4–1 cup lemon-lime juice (about 3 lemons and 4 limes)
- Splash of white vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- Optional toppings: Tajín, chili oil, or crispy garnishes
Preparation
- Boil eggs in hot water for 12 minutes, then immediately transfer to an ice bath to stop cooking.
- Peel the eggs and set aside. Slice some in half if desired for texture.
- Slice the onion and Serrano peppers (or Jalapeños for milder spice).
- Chop the cilantro.
- In a large bowl, combine the eggs, onion, peppers, and cilantro.
- Pour in lemon-lime juice, add a splash of vinegar, and season with salt and pepper.
- Gently mix all ingredients to coat evenly without breaking the eggs.
- Refrigerate 10–15 minutes before serving to allow flavors to meld.
- Garnish with optional Tajín, chili oil, or crispy toppings just before serving.
Cook’s Notes
- Adjust Serrano peppers according to your heat tolerance; removing seeds will reduce spice.
- Letting the salad chill improves flavor absorption and enhances the refreshing citrus notes.
- This salad can be made a few hours ahead for meal prep, but add optional toppings just before serving to keep textures crisp.
Serving Suggestions
- Serve on a bed of fresh lettuce or baby spinach.
- Pair with warm corn or flour tortillas for a light, handheld meal.
- Great alongside grilled chicken, fish, or shrimp for added protein.
Beverage Suggestions
- Freshly made agua fresca (cucumber-lime or watermelon).
- Sparkling water with a splash of lime.
- Light Mexican lager or a crisp white wine like Sauvignon Blanc for adult pairings.
