Carter Family Recipes

This curried fermented cauliflower delivers a bold, tangy crunch with warm spice from curry powder and aromatic garlic. The natural fermentation process develops a pleasantly sour flavor while preserving the cauliflower’s firm texture. It’s a simple lacto-fermented vegetable that works well as a condiment, snack, or flavorful side.

Ingredients

  • 1 head cauliflower, cut into small florets
  • 2–3 Tablespoons curry powder
  • 4 cloves garlic, peeled and crushed
  • 3 Tablespoons salt
  • 1 quart water

Preparation

  1. Prepare the Brine: Heat the water just enough to dissolve the salt. Stir in the salt until completely dissolved, then allow the brine to cool to room temperature.
  2. Season the Jar: Place the crushed garlic cloves and curry powder in the bottom of a clean fermentation jar.
  3. Prepare the Cauliflower: Cut the cauliflower into small florets and pack them into the jar.
  4. Add the Brine: Pour the cooled brine over the cauliflower until the vegetables are fully covered. Leave at least 2 inches of headspace at the top of the jar.
  5. Ferment: Seal with a fermentation lid. Shake the jar well to help distribute and dissolve the curry powder.
  6. Fermentation Time: Allow the cauliflower to ferment at room temperature for 5–7 days. Taste after day 5 and continue fermenting until the desired tanginess is reached.
  7. Store: Once fermented, transfer the jar to the refrigerator to slow fermentation and preserve flavor.

Cook’s Notes

  • Keep the cauliflower completely submerged in the brine to prevent spoilage.
  • Fermentation time may vary depending on room temperature. Warmer kitchens ferment faster.
  • If you prefer a stronger curry flavor, use the full 3 Tablespoons of curry powder.
  • A fermentation weight can help keep the florets submerged if needed.
  • The brine may become slightly cloudy during fermentation, which is normal.

Serving Suggestions

  • Serve as a tangy side dish alongside grilled meats or roasted chicken.
  • Chop and add to grain bowls or rice dishes for a bright, spicy accent.
  • Use as a topping for sandwiches, wraps, or tacos.
  • Pair with cured meats and cheeses on a charcuterie board.

Beverage Suggestions

  • Crisp lager or pilsner to balance the spice and acidity.
  • Dry Riesling or Sauvignon Blanc to complement the tangy fermented flavor.
  • Sparkling water with lemon for a refreshing non-alcoholic pairing.
