Fresh ricotta cheese is surprisingly simple to make at home, and the Instant Pot makes the process even easier by gently heating the milk to the ideal temperature for curd formation. With just whole milk and a small amount of lemon juice or vinegar, you can create soft, creamy ricotta with delicate curds and a clean, fresh flavor. Lemon juice produces a slightly brighter flavor that works well in sweet dishes, while white vinegar creates a more neutral ricotta suited for savory recipes like pasta and lasagna.
Ingredients
- 1 gallon whole milk
- 1–2 cups heavy cream (optional, for extra creaminess)
- 1/2 Cup lemon juice or white vinegar
Preparation
- Heat the Milk: Pour the milk into the Instant Pot. Select the Yogurt setting and adjust to Boil mode. This will heat the milk to approximately 180°F before turning off automatically.
- Allow the Steam to Vent: When the cycle completes, remove the lid and allow the milk to vent briefly.
- Add the Acid: Slowly pour the lemon juice or vinegar into the hot milk while gently stirring. Curds will begin forming immediately as the milk separates into curds and whey.
- Rest the Mixture: Let the mixture stand undisturbed for 10–15 minutes so the curds fully separate.
- Prepare the Strainer: Line a colander with cheesecloth and place it over a large bowl.
- Strain the Curds: Carefully pour the curds and whey into the cheesecloth.
- Drain for 10–15 minutes for a creamy, soft texture.
- For firmer ricotta, drain a little longer, but shorter drainage preserves creaminess.
- Optional Cream Fold-In: After draining, fold in 1–2 tablespoons of cream or milk for extra silkiness.
- Finish and Store: Transfer the ricotta to a container and refrigerate. Use within 5–7 days.
Cook’s Notes
- Whole milk produces the creamiest ricotta and the best yield. Adding cream increases richness.
- Do not stir aggressively after adding the acid, or the curds may become grainy.
- For creamier ricotta, drain for a shorter time. For thicker ricotta, drain longer.
- The leftover whey can be used in bread baking, soups, smoothies, or pancake batter.
- Lemon juice works well for desserts, while vinegar is better suited for savory dishes.
