These San Antonio taqueria-style refried beans capture the rich, rustic flavor found in neighborhood taco shops throughout South Texas. Starting with deeply seasoned Instant Pot pinto beans, the beans are refried in flavorful chorizo fat with sautéed onion and garlic, then slowly mashed into a creamy, savory spread.
Unlike many restaurant beans that rely heavily on added spices, this version builds its character from the rendered chorizo drippings and the broth from the original beans. A small amount of queso fresco stirred in at the end adds a subtle tang and velvety finish. The result is bold, hearty refried beans with the unmistakable flavor of a classic San Antonio taqueria.
Ingredients
- 3 cups cooked Instant Pot Pinto Beans
- 1/2 to 3/4 cup bean cooking liquid (from the pinto beans)
- 1/2 cup Mexican chorizo
- 1 Tablespoon bacon fat or lard (if needed)
- 1/2 small onion, finely diced
- 2 cloves garlic, minced
- 1 Tablespoon butter
- 1/4 cup crumbled queso fresco
- 1 teaspoon lime juice (optional)
- Salt to taste
- 1 Tablespoon chopped cilantro (optional garnish)
Preparation
- Cook the Chorizo: In a large skillet over medium heat, cook the chorizo until fully browned and crumbly. Stir frequently as it cooks and renders its flavorful fat.
- Reserve the Fat: Remove the cooked chorizo with a slotted spoon and set aside, leaving the rendered fat in the skillet. If needed, add a small amount of bacon fat or lard to reach about 2 Tablespoons of fat in the pan.
- Sauté the Onion: Add the diced onion to the skillet and cook for about 5 minutes until softened and lightly golden.
- Add the Garlic: Stir in the garlic and cook for 30 seconds until fragrant.
- Add the Beans: Stir in the cooked pinto beans along with about 1/2 cup of their cooking liquid.
- Mash the Beans: Using a potato masher or wooden spoon, mash the beans while stirring until they reach a thick, creamy consistency.
- Simmer and Enrich: Cook for 6–8 minutes, stirring frequently. Add additional bean cooking liquid as needed to maintain a smooth texture.
- Finish the Beans: Stir in the butter, reserved chorizo, and crumbled queso fresco until melted and incorporated. Taste and adjust salt if needed. Add lime juice if desired.
- Serve: Transfer to a warm serving bowl and garnish with chopped cilantro if using.
Cook’s Notes
- Rendering the chorizo first creates the signature taqueria flavor base.
- Queso fresco adds creaminess and a subtle tang without making the beans overly cheesy.
- Mash the beans gradually while simmering to achieve the smooth texture typical of South Texas taco shops.
- If the beans become too thick, loosen them with a splash of warm bean broth.
- For an even richer finish, stir in an extra teaspoon of butter just before serving.
