Carter Family Recipes

A rich and complex hot chocolate base with a nutty peanut influence and a gentle ancho‑chili warmth. This pantry‑friendly mix combines traditional cocoa elements with powdered peanut butter and a touch of spice, creating a sophisticated drink that’s perfect for cool evenings or thoughtful gifting. The texture dissolves beautifully in hot milk or your favorite dairy substitute.

Ingredients

  • 1 full container (27.7 oz) Nestlé Rich Milk Chocolate Hot Cocoa Mix
  • 1/2 cup Hershey’s Special Dark Cocoa
  • 1/2 cup Coffee mate French Vanilla Creamer
  • 3/4 cup powdered coffee creamer
  • 3/4 cup powdered peanut butter
  • 3/4 cup powdered milk or cream powder
  • 3 Tablespoons powdered sugar (adjust to taste)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1 teaspoon vanilla powder (optional)
  • 2 teaspoons instant espresso powder
  • 2 teaspoons ancho chili powder
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground chipotle chile powder (optional, for smoky depth)
  • 1/2 teaspoon xanthan gum (optional, for smooth texture and reduced clumping)

Preparation

  1. In a large bowl, whisk together all dry mix ingredients until well combined and uniform in color.
  2. Transfer the mixture to an airtight jar or container and label it for storage or gifting.
  3. To prepare a cup of hot chocolate, heat 1 cup of milk (or milk alternative) until steaming.
  4. Stir in 3–4 Tablespoons of the mix, whisking until smooth and fully dissolved.
  5. Adjust sweetness or heat at the cup level with extra sugar or spices if desired.

Vitamix Aer Container Instructions

  1. Warm the Milk: Heat milk or milk substitute to ~170–180 °F.
  2. Add Mix: Place 3–4 Tablespoons of hot chocolate mix per cup into the Aer container.
  3. Aerate:  Lock lid and select aerate/froth function. Froth for 20–40 seconds until smooth and slightly foamy.
  4. Adjust Flavor: Add extra sweetener or powdered creamer if desired.
  5. Serve: Pour into mugs; optionally garnish with cocoa, cinnamon, chili, or whipped cream.

Cook’s Notes

  • Peanut Butter Powder adds peanut depth without oiliness; you can substitute additional powdered milk if you want less peanut flavor.
  • Ancho chili powder contributes a mild, smoky chili aroma rather than fiery heat — perfect for Mexican‑style hot chocolate vibes. If you want more fire, increase cayenne slightly.
  • Store mix in a cool, dry place for up to 3 months.
  • For a richer drink, replace half the milk with cream or steamed oat milk.

Serving Suggestions

  • Top with whipped cream and a light dusting of cocoa or cinnamon.
  • Sprinkle a pinch of extra ancho chili on top for guests who like heat.
  • Serve with dark chocolate shavings or a cinnamon stick stirrer for extra flair.
  • Pair with lightly salted roasted peanuts or shortbread on the side to complement the peanut‑chocolate juxtaposition.

Beverage Pairing Suggestions

  • Coffee‑Infused Variation: Add a shot of espresso to your prepared cup for a mocha twist.
  • Adult Spiked Option: A splash of Kahlúa or bourbon enhances the nutty, spicy layers.
  • Tea Pairing: Serve alongside a mild rooibos chai to balance spicy richness.
