Carter Family Recipes

Traditional Cowboy Candy is made with fresh Jalapeños, but using pickled Jalapeño slices creates a quick and convenient shortcut that delivers sweet heat in a fraction of the time. The pickling process has already softened the peppers, allowing them to absorb the sweet syrup quickly while retaining their signature tang. These sweet-and-spicy Jalapeños are perfect on burgers, sandwiches, charcuterie boards, cream cheese with crackers, or chopped into deviled eggs.

Ingredients

  • 3 cups pickled Jalapeño slices (about two 12-ounce jars), drained
  • 1 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup reserved pickling liquid from the Jalapeños
  • 1 tablespoon unsalted butter (optional)
  • 1/2 teaspoon mustard seed
  • 1/2 teaspoon celery seed
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground turmeric
  • 1/8 teaspoon cayenne pepper, or to taste (optional)
  • 1 tablespoon honey (optional)

Preparation

  1. Drain the pickled Jalapeños, reserving 1/4 cup of the pickling liquid.
  2. In a small saucepan, combine the granulated sugar, apple cider vinegar, reserved pickling liquid, mustard seed, celery seed, garlic powder, turmeric, cayenne pepper, and honey, if using.
  3. Bring the mixture to a gentle boil over medium heat, stirring until the sugar completely dissolves.
  4. Reduce the heat to low and simmer for 3-5 minutes until the syrup begins to thicken slightly.
  5. Add the pickled Jalapeños and simmer gently for 1-2 minutes, stirring occasionally. Avoid overcooking, as the Jalapeños are already softened from pickling.
  6. Remove the saucepan from the heat and stir in the butter, if using, until melted and fully incorporated.
  7. Transfer the Jalapeños and syrup to a clean glass jar and allow to cool to room temperature.
  8. Seal and refrigerate for at least 24 hours before serving. The flavor continues to improve over the next 2-3 days.

Cook’s Notes

  • Pickled Jalapeños produce a tangier Cowboy Candy than fresh peppers, with slightly less crunch.
  • Bread-and-butter style Jalapeños may produce a sweeter final product; reduce the sugar slightly if desired.
  • For extra heat, add 1 tablespoon finely diced fresh Jalapeño.
  • The syrup thickens as it cools in the refrigerator.
  • Save leftover syrup to drizzle over cream cheese, burgers, grilled meats, cornbread, or deviled eggs.
  • Always use a clean utensil when serving to maximize shelf life.
  • Store refrigerated for up to 3 months.

Serving Suggestions

  • Spoon over cream cheese and serve with crackers.
  • Add to burgers, hot dogs, or pulled pork sandwiches.
  • Chop into deviled eggs or potato salad.
  • Serve on charcuterie boards with smoked sausage and sharp cheddar cheese.
  • Use as a topping for nachos, barbecue brisket, or smoked chicken.

Beverage Suggestions

  • Mexican lager with lime
  • Shiner Bock or other amber lager
  • Sparkling water with citrus
  • Bloody Mary
  • Unsweet Texas iced tea

Sweet, tangy, and pleasantly spicy, this shortcut Cowboy Candy transforms ordinary pickled Jalapeños into an irresistible condiment that belongs in every refrigerator. Whether served at a backyard barbecue, game-day gathering, or lake-house weekend, it is guaranteed to disappear quickly.
