Carter Family Recipes

The Instant Pot is one of the easiest and most reliable ways to make hard-boiled eggs. Pressure cooking produces tender whites, creamy yolks, and eggs that peel beautifully. By carefully controlling the cooking time and immediately chilling the eggs in an ice bath, you can consistently avoid the green ring that sometimes forms around the yolk from overcooking.

Ingredients

  • 12 large eggs
  • 1 cup water
  • Ice
  • Cold water

Preparation

  1. Place the metal trivet or steamer rack in the Instant Pot.
  2. Pour 1 cup water into the bottom of the pot.
  3. Arrange the eggs in a single layer on the trivet. A second layer is acceptable if necessary.
  4. Secure the lid and set the pressure release valve to the Sealing position.
  5. Cook on High Pressure for 5 minutes.
  6. When the cooking cycle is complete, allow the pressure to naturally release for 5 minutes.
  7. Carefully perform a quick release of any remaining pressure.
  8. Immediately transfer the eggs to an ice bath filled with ice and cold water. Chill for at least 5 minutes, or until completely cooled.
  9. Gently crack and peel the eggs under cool running water, if desired.

Cook’s Notes

  • The popular 5-5-5 method (5 minutes pressure cook, 5 minutes natural release, 5 minutes ice bath) consistently produces tender whites and creamy yolks with bright yellow centers.
  • The green or gray ring around the yolk is caused by a reaction between sulfur in the egg white and iron in the yolk. Overcooking and slow cooling encourage this reaction.
  • Immediate chilling in an ice bath stops residual cooking and helps prevent the green ring from forming.
  • Eggs that are 7-14 days old generally peel more easily than very fresh eggs.
  • For slightly softer yolks, reduce the pressure-cook time to 4 minutes.
  • For firmer yolks intended for deviled eggs or pickling, use the 6-5-5 method (6 minutes pressure cook, 5 minutes natural release, 5 minutes ice bath).
  • At elevations above 3,000 feet, increase the pressure-cook time by 1 minute.
  • Refrigerate unpeeled hard-boiled eggs for up to 1 week.
  • Peeled eggs should be used within 3-5 days.
