Carter Family Recipes

Texas Firecracker Crunch is a bold, savory topping inspired by classic Southern Fire Crackers and savory granola. Saltines are coated with butter, avocado oil, ranch seasoning, Worcestershire sauce, and a blend of peppers, then baked until crisp and golden. Pecans, pepitas, sesame seeds, and crispy fried onions create layers of texture and flavor that make this topping equally at home on chili, baked potatoes, smoked meats, salads, soups, and casseroles.

Ingredients

  • 1 (16-ounce) box saltine crackers, broken into approximately 1/2-inch pieces
  • 1 stick (1/2 cup) unsalted butter, melted
  • 1/2 cup avocado oil
  • 1-1/2 packets ranch dressing mix
  • 1 Tablespoon Worcestershire sauce
  • 3 Tablespoons crushed red pepper flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon chipotle powder
  • 1-1/2 cups pecan halves, roughly chopped
  • 3/4 cup roasted pepitas
  • 2 Tablespoons white sesame seeds
  • 1/2 cup crispy fried onions

Preparation

  1. Preheat the oven to 250°F.
  2. Place the broken saltine crackers, chopped pecans, roasted pepitas, and sesame seeds in a large mixing bowl.
  3. In a separate bowl, whisk together the melted butter, avocado oil, ranch dressing mix, Worcestershire sauce, crushed red pepper flakes, garlic powder, onion powder, black pepper, cayenne pepper, smoked paprika, and chipotle powder.
  4. Pour the seasoning mixture over the cracker mixture.
  5. Gently toss until everything is evenly coated.
  6. Spread the mixture onto two large rimmed baking sheets in an even layer.
  7. Bake for 20 minutes.
  8. Stir the mixture and rotate the pans.
  9. Continue baking for an additional 10 to 15 minutes, or until the crackers are crisp and lightly golden.
  10. Remove from the oven and immediately stir in the crispy fried onions.
  11. Allow the mixture to cool completely.
  12. Break apart any large clusters and transfer to airtight containers for storage.

Cook’s Notes

  • Stirring in the fried onions after baking preserves their crisp texture and prevents scorching.
  • Pecans provide richness and a distinctly Southern character.
  • Sesame seeds add a subtle toasted nuttiness that ties the flavors together.
  • Worcestershire sauce contributes umami depth without making itself known as a distinct flavor.
  • For additional heat, increase the cayenne pepper to 1/2 teaspoon.
  • For a smokier flavor, increase the chipotle powder to 1/2 teaspoon.
  • Store in an airtight container for up to 2 weeks.
