Carter Family Recipes

These Michelin-inspired soufflé pancakes are exceptionally light, airy, and delicate. Whipped egg whites create a lofty structure that rises dramatically in the pan before being gently steamed to finish cooking. The exterior develops a light golden crust while the interior remains almost cloud-like—a cross between a classic pancake, a soufflé, and a sponge cake. Unlike traditional American pancakes, these are cooked thick and tall, often reaching 1 1/2–2 inches (4–5 cm) in height. Finished with salted butter and warm maple syrup, they make an unforgettable breakfast or brunch centerpiece.

Yield: 3–4 large soufflé pancakes

Ingredients

  • 1 Cup egg whites (240 g), from about 8 large eggs
  • 1 Tablespoon + 1 teaspoon fresh lemon juice (20 g)
  • 1/2 Cup caster sugar (100 g)
  • 3 Tablespoons cornstarch (20 g)
  • 5 large egg yolks (100 g)
  • 1 Cup + 1 Tablespoon Italian “00” flour (140 g)
  • 3/4 teaspoon fine sea salt (4 g)
  • 3 Tablespoons + 1 teaspoon whole milk (50 g)
  • 1 Tablespoon unsalted butter, for the pan

For Serving

  • Salted butter
  • Warm maple syrup

Preparation

  1. Place the egg whites and lemon juice in a large mixing bowl.
  2. Using a hand mixer or stand mixer, whisk until soft peaks form.
  3. Gradually add the caster sugar while continuing to whisk until medium-firm peaks form. The meringue should hold its shape while the tip still bends slightly.
  4. Sift the cornstarch over the meringue and whisk briefly until incorporated.
  5. Add the egg yolks and whisk just until incorporated.
  6. In a separate bowl, sift together the flour and salt.
  7. Using a large spatula, gently fold the flour mixture into the batter. Fold from the bottom of the bowl upward while rotating the bowl. Stop as soon as the flour disappears.
  8. Fold in the milk until evenly incorporated.
  9. Heat a 6–8 inch (15–20 cm) non-stick skillet with a tight-fitting lid over low heat.
  10. Add the butter and wipe away any excess with a paper towel, leaving only a thin coating.
  11. Ladle approximately 3/4 Cup (200 g) of batter into the center of the skillet.
  12. Cover and cook for approximately 5 minutes, or until the edges begin pulling away from the pan and the pancake can support itself.
  13. Carefully flip the pancake.
  14. Cook for an additional 1 minute. The second side does not need to brown as deeply as the first.
  15. Transfer the pancake to a sheet of parchment paper and loosely wrap.
  16. Place the wrapped pancake in a steamer.
  17. Cover and steam for 4 minutes.
  18. Carefully unwrap and transfer to a serving plate.
  19. Top with a generous pat of salted butter and spoon or pipe warm maple syrup over the top immediately before serving.

Cook’s Notes

  • Fresh eggs produce the most stable meringue and the greatest rise. For maximum volume, separate the eggs while cold, then allow the whites to come to room temperature before whipping.
  • If caster sugar is unavailable, pulse granulated sugar in a food processor for 15–20 seconds to reduce the crystal size.
  • The key to success is preserving as much air as possible in the batter during folding.
  • Low heat is essential. Excessive heat will brown the exterior before the center is fully cooked.
  • The steaming step is what creates the signature cloud-like texture.
  • A ring mold may be used for even taller pancakes, although it is not required.
  • Serve immediately after steaming for the best texture and presentation.
  • The parchment wrap should be loose enough to allow steam to circulate while protecting the delicate pancake.
