This simple, creamy oatmeal is prepared using the pot-in-pot method, which prevents scorching and makes cleanup easy. The oats cook in whole milk with Splenda, powdered creamer, and a pinch of salt, while a separate cup of water in the Instant Pot liner creates the steam needed for pressure cooking.
Ingredients
Oatmeal
- 3/4 cup old-fashioned rolled oats
- 3/4 cup whole milk
- 1/8 teaspoon kosher salt
- 1/4 cup Splenda Granulated Sweetener
- 1/4 cup powdered coffee creamer
For the Instant Pot
- 1 cup water
Optional Toppings
- Fresh blueberries
- Sliced strawberries
- Banana slices
- Chopped pecans
- Chopped walnuts
- Ground cinnamon
- Freshly grated nutmeg
Preparation
- Pour 1 cup of water into the Instant Pot liner.
- Place a trivet inside the Instant Pot.
- In an oven-safe bowl that fits comfortably inside the Instant Pot, combine the rolled oats, whole milk, kosher salt, Splenda, and powdered coffee creamer. Stir until evenly combined.
- Carefully place the bowl on the trivet.
- Lock the lid and set the pressure release valve to the Sealing position.
- Select Pressure Cook on high pressure and cook for 4 minutes.
- When the cooking cycle is complete, allow the pressure to release naturally for 4 minutes.
- Carefully release any remaining pressure.
- Remove the bowl from the Instant Pot and stir the oatmeal thoroughly.
- Allow the oatmeal to rest for 1 to 2 minutes before serving.
- Add toppings, if desired, and serve immediately.
Cook’s Notes
- The water goes only into the Instant Pot liner. It is not mixed into the oatmeal.
- A small amount of kosher salt enhances the natural flavor of the oats without making the oatmeal taste salty.
- The pot-in-pot method helps prevent scorching and keeps the Instant Pot liner clean.
- This formula produces a thick, creamy oatmeal.
- For a thinner consistency, stir in a small amount of warm milk after cooking.
- For additional protein, serve the oatmeal with plain Greek yogurt, cottage cheese, or eggs.
