Golden, Parmesan-crusted chicken cutlets are topped with rich tomato marinara and melted mozzarella, then tucked between buttery, toasted brioche buns. Each sandwich is sliced in half and nestled cut-side down into a generous pool of warm, velvety garlic-Parmesan Alfredo sauce.

This indulgent Italian-American comfort food combines two favorites: crispy chicken Parmesan and creamy Alfredo. The tangy marinara complements the savory chicken and melted mozzarella, while the rich Alfredo provides a luxurious dipping sauce.

The Alfredo is prepared in a Vitamix using gently warmed heavy cream, butter, sautéed garlic, and freshly grated Parmesan. Brief blending produces a smooth, emulsified sauce with a pourable consistency ideal for dipping.

The sandwich halves are positioned with their exposed cut surfaces resting directly in the Alfredo, allowing the bread, chicken, and filling to absorb some of the creamy sauce while the upper portions retain their contrasting textures. A finishing sprinkle of Parmesan and fresh parsley completes the presentation.

  • 1/2 cup finely grated Parmesan cheese
  • 1 1/2 teaspoons kosher salt, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper, optional
  • Neutral frying oil, such as canola or vegetable oil, enough to reach a depth of approximately 1/2 inch in the skillet

Vitamix Garlic-Parmesan Alfredo Dipping Sauce

  • 3 tablespoons unsalted butter
  • 4 medium garlic cloves, finely minced
  • 2 cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/8 teaspoon freshly grated nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 to 4 tablespoons whole milk, if needed to adjust consistency
  • Kosher salt, to taste

Sandwich Assembly and Garnish

  • 4 brioche hamburger buns, preferably sesame-topped
  • 1 tablespoon unsalted butter, softened
  • 1/4 cup Martha Stewart’s Basic Red Sauce, or prepared marinara sauce
  • 1 cup shredded low-moisture mozzarella cheese
  • 1 tablespoon finely chopped fresh Italian parsley
  • 1/4 teaspoon crushed red pepper flakes, optional
  • 2 tablespoons freshly grated Parmesan cheese, for garnish

Instructions

Prepare the Chicken

  1. Slice each chicken breast horizontally into two equal cutlets, creating four pieces. Place each cutlet between sheets of plastic wrap and gently pound to an even thickness of approximately 1/2 inch.
  2. Pat the chicken dry with paper towels. Season both sides evenly with 1 teaspoon of the kosher salt.
  3. Prepare three shallow bowls for breading. Place the flour in the first bowl. Whisk the eggs and 2 tablespoons of milk together in the second bowl.
  4. Combine the panko breadcrumbs, Parmesan cheese, remaining 1/2 teaspoon kosher salt, garlic powder, onion powder, smoked paprika, black pepper, and optional cayenne pepper in the third bowl.
  5. Dredge each chicken cutlet in the flour, shaking off any excess. Dip into the egg mixture, allowing the excess to drip away.
  6. Press each cutlet firmly into the seasoned breadcrumb mixture, coating both sides completely. Transfer to a wire rack and repeat with the remaining chicken.
  7. Allow the breaded cutlets to rest for 5 minutes while heating the frying oil. This helps the coating adhere during cooking.

Fry the Chicken

  1. Add enough oil to a large, heavy-bottomed skillet to reach approximately 1/2 inch deep. Heat over medium-high heat until the oil reaches 350°F.
  2. Carefully place two breaded cutlets into the hot oil, leaving space between them.
  3. Fry for approximately 3 to 4 minutes per side, turning once, until the coating becomes deeply golden and crisp.
  4. Adjust the heat as necessary to maintain an oil temperature of approximately 325–350°F. Continue cooking until the thickest portion of each cutlet reaches an internal temperature of 165°F.
  5. Transfer the chicken to a clean wire rack positioned over a baking sheet. Repeat with the remaining cutlets, allowing the oil to return to 350°F before beginning the second batch.
  6. Allow the cooked chicken to rest uncovered. Avoid stacking the cutlets or placing them directly on paper towels, which can trap moisture and soften the crust.

Prepare the Vitamix Garlic-Parmesan Alfredo Dipping Sauce

  1. Melt the 3 tablespoons of unsalted butter in a small, heavy-bottomed saucepan over medium-low heat.
  2. Add the minced garlic and cook for approximately 30 to 60 seconds, stirring constantly, until fragrant but not browned.
  3. Pour in the heavy cream and stir until the garlic and melted butter are evenly incorporated.
  4. Continue warming the mixture over medium-low heat until it reaches approximately 130–140°F. The cream should be warm enough to help melt the Parmesan but should not simmer or boil.
  5. Carefully transfer the warm cream mixture to a full-size Vitamix container approved for blending hot liquids. Secure the appropriate vented lid according to the manufacturer’s instructions.
  6. Start the Vitamix on Variable 1 and gradually increase to Variable 4 or 5. Blend for approximately 15 seconds to distribute the garlic evenly throughout the cream.
  7. Stop the blender. Add the freshly grated Parmesan cheese, black pepper, and nutmeg. Secure the lid again.
  8. Start on Variable 1 and gradually increase to Variable 4 or 5. Blend for approximately 30 to 45 seconds, or until the Parmesan is fully incorporated and the sauce is smooth and uniform.
  9. Stop the blender and add the lemon juice. Blend on Variable 2 or 3 for approximately 5 seconds to incorporate.
  10. Check the consistency. The Alfredo should be silky and pourable, thick enough to coat the back of a spoon but fluid enough to spread across a shallow serving dish.
  11. If the sauce is too thick, add warm whole milk, 1 tablespoon at a time, blending briefly on low speed after each addition. Use only enough milk to achieve the desired consistency.
  12. Taste and add kosher salt only if needed, since Parmesan contributes considerable saltiness.
  13. Transfer the finished sauce to a saucepan and keep warm over very low heat, stirring occasionally. Do not allow the sauce to boil. If it thickens while standing, whisk in a little additional warm milk immediately before serving.

Add the Marinara and Melt the Mozzarella

  1. Preheat the oven broiler to high. Position an oven rack approximately 6 inches below the heating element.
  2. Gently warm the marinara sauce in a small saucepan over low heat for approximately 2 to 3 minutes.
  3. Arrange the fried chicken cutlets on a wire rack set over a broiler-safe baking sheet.
  4. Spoon approximately 1 tablespoon of warm marinara sauce onto the center of each chicken cutlet. Spread the sauce evenly over the central portion of the breading, leaving the outer edges exposed to preserve their crispness.
  5. Sprinkle each cutlet with 1/4 cup shredded low-moisture mozzarella cheese, covering the marinara.
  6. Place the chicken beneath the broiler for approximately 30 to 90 seconds, watching carefully, until the mozzarella melts and develops a few lightly golden spots.
  7. Remove the chicken from the oven and allow it to stand for approximately 1 minute.

Toast and Assemble the Sandwiches

  1. Split the brioche buns and lightly butter the cut sides with the softened butter.
  2. Toast the buns, cut sides down, in a large skillet over medium heat for approximately 1 to 2 minutes, until evenly golden. Work in batches if necessary.
  3. Place one marinara- and mozzarella-topped chicken cutlet onto the bottom half of each toasted bun.
  4. Add the top half of each bun, pressing gently just enough to secure the sandwich without compressing the crispy chicken.
  5. Transfer the sandwiches to a cutting board and allow them to stand for approximately 1 minute.
  6. Using a sharp serrated knife, slice each sandwich into two equal halves, exposing the layers of crispy chicken, marinara, and melted mozzarella. Use a gentle sawing motion to avoid crushing the bread.

Prepare the Alfredo Sauce Pool and Serve

  1. Warm four shallow, rimmed dinner plates or wide, shallow serving bowls. The dishes should be large enough to accommodate the sandwich halves without crowding.
  2. Stir the warm Alfredo sauce until smooth and pourable. If necessary, whisk in a small amount of warm milk to restore the desired consistency.
  3. Pour approximately 1/2 cup of warm Alfredo sauce into the center of each serving dish. Gently tilt the dish to distribute the sauce into a broad, even pool.
  4. Arrange two sandwich halves in each serving dish, positioning them cut-side down directly into the Alfredo sauce. Angle the halves slightly so they remain stable while the exposed bread, chicken, and filling contact the sauce.
  5. Allow the sandwich halves to rest in the Alfredo for approximately 15–30 seconds, giving the exposed surfaces time to absorb some of the sauce while leaving the upper portions relatively crisp.
  6. Distribute any remaining Alfredo sauce around the sandwiches, rather than pouring it directly over the tops.
  7. Garnish the exposed Alfredo sauce with the additional grated Parmesan, chopped parsley, and optional crushed red pepper flakes.
  8. Serve immediately while the chicken is crisp, the mozzarella is melted, and the Alfredo sauce is warm. Dip each bite of the sandwich into the surrounding sauce.

Cook’s Notes

Marinara Sauce: Homemade Martha Stewart’s Basic Red Sauce is an excellent choice for these sandwiches. Its tomatoes, garlic, basil, oregano, and tomato paste complement the Parmesan-crusted chicken and creamy Alfredo. For convenience, a good-quality jarred marinara sauce may be substituted. Choose a thick sauce with a balanced tomato flavor. If the sauce is watery, simmer it uncovered for several minutes before using. Apply approximately 1 tablespoon to each cutlet, leaving the edges of the breading exposed to preserve their crispness.

Vitamix Preparation: Using a Vitamix to blend the warmed cream and freshly grated Parmesan produces a smooth, emulsified Alfredo sauce without prolonged whisking. Brief blending is sufficient because the cream has already been warmed.

Vitamix Container Selection: Use a full-size Vitamix container and lid approved for hot liquids. Never blend hot ingredients in a sealed personal blending cup. Begin at the lowest speed and increase gradually, following the safety instructions for the specific model.

Avoid Overblending: Unlike recipes that rely on extended high-speed blending to heat cold ingredients, this Alfredo begins with warm cream. Excessive blending can introduce foam, increase the temperature unnecessarily, and potentially affect the sauce’s texture.

Two-Sauce Preparation: Marinara and Alfredo serve different purposes. The marinara is spread directly onto the fried chicken before adding mozzarella, creating the familiar flavor of chicken Parmesan. The Alfredo is reserved for the serving dish, where it forms a generous pool for dipping.

Alfredo Sauce Consistency: The Alfredo should be slightly more fluid than a conventional pasta sauce but substantial enough to cling to the sandwich when dipped. If the sauce becomes too thick, incorporate a small amount of warm milk. Avoid reducing the sauce excessively.

Sauce Quantity: The recipe provides approximately 2 1/2 cups of Alfredo sauce, depending on reduction and the amount of milk added. This allows approximately 1/2 cup per serving, with a little extra for the final presentation.

Plating and Sauce Absorption: Position the sandwich halves cut-side down in the warm Alfredo sauce. This allows the exposed bread, chicken, and filling to absorb the sauce while leaving the upper portions relatively crisp. Allow approximately 15–30 seconds for absorption before serving. Avoid letting the sandwiches stand too long, as the bread will progressively soften.

Xanthan Gum: No xanthan gum is necessary. The heavy cream and Parmesan provide sufficient body for the dipping sauce. Additional thickeners could make the finished Alfredo unnecessarily thick or gummy.

Choosing the Serving Dish: Wide, shallow bowls or rimmed dinner plates work best. Deep bowls can cause the sandwich sections to sit too low in the Alfredo, while completely flat plates may allow the sauce to spread too thinly.

Maintaining Crispness: Leave the outer edges of the fried chicken uncovered when adding marinara and mozzarella. The final presentation deliberately allows the cut surfaces to absorb some Alfredo while preserving the crispy coating on the exposed portions of the chicken.

Chicken Thickness: Pound the chicken to an even thickness of approximately 1/2 inch. Uniform cutlets cook more evenly and produce sandwiches that are easier to assemble and slice.

Frying Temperature: Maintain an oil temperature between 325°F and 350°F. Allow the oil to return to the proper temperature between batches to prevent the coating from becoming greasy.

Parmesan Selection: Freshly grated Parmesan produces the smoothest Alfredo sauce. Pre-shredded varieties may contain anti-caking ingredients that interfere with melting and can create a grainy texture.

Mozzarella Selection: Low-moisture mozzarella is preferable to fresh mozzarella. It melts evenly while introducing less moisture, helping the fried chicken retain its crispy coating.

Avoiding Alfredo Separation: Once the Parmesan has been incorporated, keep the sauce below a simmer. High heat can cause the cheese and fat to separate. If the sauce begins to look oily, remove it from the heat and whisk gently. A small amount of warm milk may help restore its consistency.

Cutting the Sandwiches: Use a sharp serrated knife and a gentle sawing motion. Pressing straight down can flatten the brioche and displace the chicken, marinara, and melted mozzarella.

Make-Ahead Preparation: The chicken can be breaded and refrigerated for up to 8 hours before frying. The marinara may be prepared in advance, but the Alfredo is best prepared shortly before serving. Assemble and plate the sandwiches immediately before eating.

Optional Garlic-Butter Finish: For additional garlic flavor, brush the toasted bun interiors with a little melted garlic butter before assembling.

Serving Suggestions

Because these sandwiches combine fried chicken, melted cheese, marinara, and a generous amount of Alfredo sauce, lighter accompaniments with acidity or fresh vegetables provide the most balanced meal.

  • Crisp Apple & Red Onion Salad With Honey-Sesame Dressing: Crisp apples, fresh red onion, and a bright honey-sesame dressing provide a refreshing contrast to the rich chicken and Alfredo.
  • Quick Pickled Red Onions: Serve a small portion alongside the sandwiches. Their acidity cuts through the richness of the cheese and cream sauce.
  • Lightly Dressed Arugula Salad: Toss fresh arugula with extra-virgin olive oil, lemon juice, and shaved Parmesan. The peppery greens complement the tomato and garlic flavors.
  • Roasted Broccolini: Roast until lightly charred and finish with fresh lemon juice and a little kosher salt.
  • Garlic-Parmesan Potato Wedges: Serve a modest portion of crispy potatoes alongside the sandwiches, using a little of the Alfredo as an additional dipping sauce.

For a complete dinner, pair the sandwiches with the apple and red onion salad or a simple lemon-dressed green salad.

Beverage Suggestions

Nonalcoholic

  • Agave Lemonade: A refreshing citrus beverage whose bright acidity provides a pleasant contrast to the rich Alfredo sauce.
  • Instant Pot Iced Tea: A smooth, refreshing beverage. Prepare it unsweetened for a particularly good pairing with the rich sandwich.
  • Limonada de Coco – Frozen Colombian Coconut Limeade: A tart, chilled coconut-lime beverage that contrasts with the savory chicken and Parmesan.
  • Brazilian Limeade: A creamy, citrus-forward beverage with a pleasant balance of sweetness and acidity.
  • Sparkling Water with Lemon: A light option that refreshes the palate between bites.
  • Italian Blood Orange Soda: Its citrus acidity and gentle bitterness complement the marinara and Parmesan.

Wine

  • Pinot Grigio: Its crisp acidity complements the tomato marinara while balancing the creamy Alfredo.
  • Unoaked Chardonnay: Provides enough body to accompany the cream sauce without overpowering the chicken.
  • Chianti: A medium-bodied Italian red wine whose acidity pairs naturally with marinara and melted mozzarella.
  • Dry Sparkling Wine: The bright acidity and effervescence contrast pleasantly with the fried coating and rich sauces.

Beer

  • Italian Pilsner: Crisp, lightly bitter, and refreshing.
  • Belgian-Style Wheat Beer: Mild citrus and spice complement the garlic and Parmesan.
  • American Pale Ale: Moderate hop bitterness balances the cream sauce and fried chicken.
  • Amber Lager: A gently malty option that complements the toasted brioche and golden chicken coating.

Storage and Reheating

Refrigeration: Store leftover cooked chicken, marinara, Alfredo sauce, and buns separately in airtight containers. Refrigerate the chicken for up to 3 to 4 days and the Alfredo sauce for up to 3 days. Follow the storage instructions for the marinara used, or refrigerate for up to 3 to 4 days if freshly prepared.

Reheating the Chicken: Preheat the oven or air fryer to 350°F. Reheat the cutlets on a wire rack for approximately 8 to 12 minutes, or until the internal temperature reaches 165°F. Reheat without sauce whenever possible to restore the crispy coating.

Reheating the Marinara: Warm gently in a small saucepan over medium-low heat until thoroughly heated. Stir occasionally to prevent sticking.

Reheating the Alfredo: Warm gently in a saucepan over low heat, stirring frequently. Add a little milk or cream as needed to restore a smooth, pourable consistency. Avoid boiling.

Reheating the Buns: Toast briefly in a skillet over medium heat until warm and lightly crisp.

Freezing: Cooked chicken cutlets may be frozen without sauce or cheese for up to 2 months for best quality. Freeze individually before transferring to airtight freezer-safe containers. Reheat from frozen in a 350°F oven until the internal temperature reaches 165°F.

Freezing Alfredo: Not recommended. The cream-based sauce may separate when thawed and reheated.

Assembled Sandwiches: Best enjoyed immediately. Sandwiches that have already been placed into the Alfredo sauce will absorb moisture and should not be stored assembled.

Variations

Spicy Cajun Chicken Parmesan Alfredo

Replace the smoked paprika, onion powder, cayenne, and black pepper in the chicken breading with 2 teaspoons of salt-free Cajun seasoning. Retain the garlic powder and kosher salt.

Add 1/4 teaspoon cayenne pepper to the Alfredo sauce and a pinch of crushed red pepper flakes to the marinara.

The result is a spicier sandwich with a Cajun-inspired seasoning profile and creamy Parmesan dipping sauce.

Bacon Chicken Parmesan Alfredo

Cook 4 slices of thick-cut bacon until crisp.

Break the bacon into pieces and distribute evenly over the marinara-topped chicken before adding the mozzarella.

The smoky bacon introduces another savory element while maintaining the balance between the tomato and Alfredo sauces.

Garlic-Butter Ciabatta

Replace the brioche buns with four individual ciabatta rolls.

Combine 2 tablespoons softened butter with 1 finely minced garlic clove. Spread the mixture over the cut sides before toasting.

Ciabatta provides a firmer, chewier texture that holds its shape particularly well when dipped into Alfredo sauce.

Blackened Chicken Parmesan Alfredo

Omit the flour, eggs, milk, panko, and Parmesan breading.

Coat the chicken with 2 teaspoons of salt-free blackening seasoning, 1 teaspoon kosher salt, and 1 tablespoon olive oil.

Cook in a lightly oiled skillet over medium-high heat until well browned and the internal temperature reaches 165°F.

Top with marinara and mozzarella, melt the cheese, and assemble and serve as directed.

Roasted Garlic Alfredo

Replace the 4 fresh garlic cloves in the Alfredo sauce with 6 roasted garlic cloves.

Mash the roasted garlic into a smooth paste and whisk it into the melted butter before adding the cream.

The sauce will have a sweeter, more mellow garlic character that complements both the marinara and crispy chicken.

Arrabbiata Chicken Parmesan Alfredo

Replace the traditional marinara with an equal amount of thick arrabbiata sauce.

The spicy tomato sauce introduces additional heat, while the mild Alfredo dipping sauce provides a creamy counterbalance.
