Carter Family Recipes

Creamy, sharp, sweet, and spicy, this easy cheese log combines rich cream cheese, extra-sharp cheddar, and finely chopped Cowboy Candy for an appetizer with plenty of Texas-style character.

The Cowboy Candy is thoroughly drained before being folded into the cheese so the mixture remains firm enough to shape. After chilling, the log is finished with additional chopped Cowboy Candy for an attractive glossy topping and served with crisp buttery crackers.

Cost: Level 2 — Economical

Ingredients

  • 8 ounces full-fat cream cheese, softened
  • 1 cup freshly shredded extra-sharp cheddar cheese
  • 1/2 cup Cowboy Candy, very well drained and finely chopped
  • 1/3 cup additional Cowboy Candy, well drained and roughly chopped, for topping
  • 1 to 2 teaspoons reserved Cowboy Candy syrup, optional, for finishing
  • Buttery crackers, for serving

Instructions

  1. Place the softened cream cheese in a medium bowl and stir or beat just until smooth.
  2. Add the freshly shredded extra-sharp cheddar and mix until evenly distributed.
  3. Pat the 1/2 cup Cowboy Candy with paper towels if it remains particularly wet, then finely chop it.
  4. Fold the chopped Cowboy Candy into the cheese mixture until evenly distributed. Do not add Cowboy Candy syrup to the mixture; keeping excess liquid out helps the cheese hold its shape.
  5. Place a large sheet of plastic wrap on the work surface. Spoon the cheese mixture lengthwise onto the center.
  6. Bring the plastic wrap around the mixture and use it to gently compress and shape the cheese into a compact log about 6 inches long. Twist the ends of the plastic wrap to secure the shape.
  7. Refrigerate for at least 2 hours, or preferably overnight, until thoroughly chilled and firm.
  8. Shortly before serving, unwrap the cheese log and transfer it to a serving platter or board.
  9. Spoon the additional chopped Cowboy Candy along the top of the log, allowing a few pieces to fall naturally around the sides. Press very lightly so some of the jalapeños adhere without completely covering the cheese.
  10. If desired, drizzle 1 to 2 teaspoons of reserved Cowboy Candy syrup lightly over the jalapeños immediately before serving.
  11. Let the cheese log stand at room temperature for 15 to 20 minutes before serving with buttery crackers.

Cook’s Notes

Drain the Cowboy Candy thoroughly. Moisture control is much more important in a cheese log than in a dip. Excess syrup can make the mixture difficult to shape.

Freshly shred the cheddar. It blends more naturally into the cream cheese and avoids the slightly powdery texture that anti-caking agents can give packaged shredded cheese.

Use extra-sharp cheddar. The stronger cheddar flavor stands up to the richness of the cream cheese and the sweetness of the Cowboy Candy.

Keep some texture. Finely chop rather than puree the Cowboy Candy. Small pieces of jalapeño throughout the log provide better texture and distinct bursts of sweet heat.

Shape before chilling. The soft mixture is much easier to form while at room temperature. The plastic wrap creates the shape without requiring you to handle the cheese directly.

Chill overnight when possible. Besides making the log firmer, the resting period gives the jalapeño, cheddar, and cream cheese flavors time to meld.

Add the exterior Cowboy Candy near serving time. This keeps the exterior attractive and prevents syrup from gradually softening the surface.

Serving Suggestions

Arrange the cheese log on a wooden serving board or simple platter surrounded by buttery crackers.

Pretzel crisps, toasted baguette slices, celery sticks, cucumber slices, and halved mini sweet peppers also work well.

For a larger appetizer board, pair it with smoked sausage, additional sharp cheddar, pickles, toasted nuts, and crackers.

Beverage Suggestions

Unsweetened iced tea with lemon is an especially good nonalcoholic pairing because its clean acidity balances the rich cheese and sweet jalapeños.

Fresh lemonade, sparkling lime water, or ginger ale also work well.

For alcoholic pairings, consider a Mexican lager, amber lager, Ranch Water, or a classic margarita.

Storage and Reheating

Store the cheese log tightly wrapped in the refrigerator for up to 4 days.

For the best appearance, store the plain cheese log and add the exterior Cowboy Candy shortly before serving.

Remove from the refrigerator 15 to 20 minutes before serving to soften slightly.

Do not reheat.
