Carter Family Recipes

Deep chocolate and bold espresso come together in this luxurious layered cream pie. A crisp chocolate graham cracker crust holds a silky dark chocolate pudding and a creamy espresso-white chocolate layer, finished with a generous cloud of softly sweetened vanilla whipped cream. The contrasting layers make every slice especially striking, while the coffee keeps the rich chocolate flavor from becoming overly sweet.

Instructions

Prepare the Crust

  1. Heat the oven to 350°F. Lightly butter a deep-dish 9-inch pie plate.
  2. Break the chocolate graham crackers into pieces and process in a food processor until finely ground. Measure about 2 cups crumbs.
  3. Add the sugar and salt and pulse briefly to combine.
  4. Add the melted butter and pulse until the crumbs are evenly moistened and resemble wet sand.
  5. Transfer the mixture to the pie plate. Using the flat bottom of a measuring cup, press the crumbs firmly and evenly across the bottom and up the sides. Pay particular attention to the junction between the bottom and sides so the crust does not become excessively thick there.
  6. Bake for about 15 minutes, until fragrant and firmly set. Transfer to a wire rack and cool completely before filling.

Prepare the Chocolate Pudding

  1. Place the chopped chocolate and butter in a medium heatproof bowl. Set aside.
  2. Whisk the egg yolks in a separate small bowl and set aside.
  3. In a medium saucepan, thoroughly whisk together the cocoa powder, sugar, cornstarch, and salt before adding any liquid. Gradually whisk in the milk until completely smooth.
  4. Cook over medium heat, whisking continuously and scraping into the corners of the saucepan, until the mixture is steaming and begins to bubble around the edges.
  5. Continue cooking for about 30 seconds after bubbling begins, then remove the saucepan from the heat.
  6. While whisking the egg yolks continuously, slowly drizzle about 1/4 cup of the hot chocolate-milk mixture into them. Gradually whisk in another 1/4 cup. This gently raises the temperature of the yolks without scrambling them.
  7. Whisk the tempered yolk mixture back into the saucepan.
  8. Return the saucepan to low heat and cook, whisking constantly, for 2 to 3 minutes, until very thick and glossy. Do not allow the mixture to boil vigorously.
  9. Immediately pour the hot pudding over the chocolate and butter. Let stand for 1 minute, then add the vanilla and whisk from the center outward until completely smooth and glossy.
  10. Let the pudding cool for about 10 to 15 minutes, stirring occasionally. It should remain easily spreadable but should no longer be steaming hot.
  11. Spoon the chocolate pudding into the cooled crust and spread it into a level layer. Refrigerate while preparing the espresso pudding.

Prepare the Espresso Pudding

  1. Sprinkle the gelatin evenly over the cold water in a small bowl. Let stand for 5 minutes to bloom.
  2. Place the white chocolate and butter in a medium heatproof bowl and set aside.
  3. Whisk the egg yolks in a separate small bowl.
  4. In a clean medium saucepan, whisk together the espresso powder, sugar, cornstarch, and salt. Gradually whisk in the milk until smooth.
  5. Cook over medium heat, whisking constantly, until steaming and bubbling around the edges.
  6. Cook for about 30 seconds more, then remove from the heat.
  7. Slowly whisk about 1/2 cup of the hot espresso mixture into the egg yolks, adding it gradually while whisking constantly.
  8. Return the tempered yolk mixture to the saucepan.
  9. Cook over low heat for 2 to 3 minutes, whisking continuously, until the pudding is noticeably thickened.
  10. Remove from the heat. Add the bloomed gelatin and whisk until it has completely dissolved.
  11. Immediately pour the hot espresso pudding over the white chocolate and butter. Let stand for 1 minute.
  12. Add the vanilla and whisk until completely smooth.
  13. Press plastic wrap directly against the surface and allow the pudding to cool at room temperature for about 15 to 20 minutes. It should still be fluid enough to spread but should not be hot when added to the chocolate layer.
  14. Check that the chocolate layer has begun to set. Gently spoon the espresso pudding over it rather than pouring everything into the center at once. Spread carefully into an even layer without disturbing the chocolate beneath.
  15. Press plastic wrap directly against the surface of the espresso pudding.
  16. Refrigerate for at least 4 hours, preferably 6 hours or overnight, until completely cold and firmly set.

Finish the Pie

  1. Shortly before serving, combine the cold heavy cream, confectioners’ sugar, and vanilla in a chilled mixing bowl.
  2. Beat on medium-high speed until the cream forms soft-to-medium peaks. Avoid beating to stiff peaks; the whipped cream should remain smooth and billowy.
  3. Remove the plastic wrap from the chilled pie and mound the whipped cream over the espresso layer. Spread decoratively, leaving natural swirls and peaks.
  4. Garnish sparingly with chocolate graham cracker crumbs. Add finely grated bittersweet chocolate or a very light dusting of cocoa powder, if desired.
  5. Refrigerate until ready to serve. For the cleanest slices, dip a thin sharp knife into hot water, wipe it dry, and make each cut with a clean blade.

Cook’s Notes

  • Use a deep pie plate: The two pudding layers are generous. A deep-dish 9-inch pie plate provides considerably more insurance against overflow than a shallow pie plate.
  • Espresso powder matters: Use instant espresso powder intended for baking or beverages rather than ordinary ground espresso beans. Ground coffee will not dissolve properly.
  • Chocolate choice: Semisweet chocolate produces the most balanced pie. Bittersweet chocolate creates a darker, less-sweet chocolate layer and is an excellent choice if a more intense chocolate flavor is preferred.
  • White chocolate: Use good-quality white chocolate containing cocoa butter whenever possible. Its flavor and melting qualities are generally better than inexpensive confectionery-style white baking chips.
  • Gelatin: The slightly reduced amount provides enough support for attractive slices while keeping the espresso layer creamy rather than rubbery.
  • Layer definition: Allowing the chocolate layer to chill while preparing the espresso pudding is important. Likewise, cool the espresso pudding slightly before adding it so the heat does not soften or blend into the chocolate layer.
  • Avoid pudding skin: Press plastic wrap directly against the pudding itself whenever it is cooling.
  • For exceptionally clean slices: Chill the completed pie overnight and add the whipped cream several hours before serving.
  • Coffee intensity: Three tablespoons of instant espresso powder produces a pronounced espresso flavor. For a gentler mocha profile, reduce it to 2 tablespoons.

Serving Suggestions

  • Serve well chilled so the contrasting chocolate and espresso layers remain clearly defined.
  • Fresh raspberries or strawberries provide welcome acidity against the rich chocolate and cream.
  • A few chocolate-covered espresso beans alongside the slice make an attractive garnish for coffee lovers.
  • Keep additional accompaniments restrained; this is already a rich, complete dessert.

Beverage Suggestions

  • Freshly brewed coffee: A medium-roast coffee reinforces the espresso notes without overwhelming the chocolate.
  • Espresso: Serve a small unsweetened espresso for a classic coffeehouse-style pairing.
  • Cold milk: A simple nonalcoholic pairing that works especially well with the dark chocolate layer.
  • Sparkling mineral water: Provides a clean, refreshing contrast between bites.
  • Caramel Espresso Frappé: A rich, icy coffee drink that echoes the espresso and chocolate flavors in the pie for an especially indulgent pairing.
  • Melted Hot Chocolate With Sea Salt Whipped Cream: A decadent pairing for a full chocolate-themed dessert service.

Storage and Reheating

  • Refrigerator: Cover and refrigerate for up to 4 days. For the best appearance and texture, add the whipped cream no more than 1 day before serving.
  • Freezing: Freezing is not recommended. Custard-style pudding layers may release moisture or become slightly grainy after thawing.
  • Reheating: Do not reheat. Serve thoroughly chilled.

Variations

  • Dark Chocolate-Espresso Pie: Use bittersweet chocolate containing approximately 60 to 70 percent cacao in the chocolate pudding.
  • Mocha Cream Topping: Fold 1 teaspoon instant espresso powder dissolved in 1 teaspoon hot water into the whipped cream after it has cooled completely.
  • Chocolate Shard Garnish: Replace the crumb garnish with thin curls or shards of bittersweet chocolate for a more elegant presentation.
  • Individual Chocolate-Espresso Pies: Divide the crust and puddings among individual tart shells or dessert glasses for single-serving presentations.
