This American-style omelette uses the precise temperature control of the Control Freak to produce tender, evenly cooked eggs with just enough structure to hold a generous filling. The master recipe is intentionally simple—eggs, salt, and butter—while cheeses, meats, vegetables, sauces, and garnishes can transform it into dozens of different omelettes.

Cook Time: 4 minutes
Total Time: 6 minutes, plus filling preparation
Difficulty: Level 1 Very Easy
Cost: Level 1 Budget
Region / Ethnic Origin: United States
Ingredients
Basic Omelette
- 2 large eggs
- 1/8 teaspoon kosher salt
- 1 teaspoon unsalted butter
Optional Filling
- 1/4 to 1/2 cup prepared filling of choice, preferably warm
- Cheese, sauce, fresh herbs, or other finishing ingredients, as desired
Instructions
- Crack the eggs into a small bowl. Add the salt and whisk thoroughly until the yolks and whites are completely combined and the mixture is uniform.
- Set the Control Freak to 310°F and allow an 8-inch nonstick skillet to come completely to temperature.
- Add the butter and swirl the skillet until the butter is melted and evenly coats the bottom and lower sides of the pan.
- Immediately pour the egg mixture into the skillet. Gently tilt and rotate the pan as necessary to distribute the eggs evenly.
- Cook undisturbed at 310°F for 4 minutes, until the eggs are set but remain tender. Avoid browning the underside.
- After 4 minutes, switch the Control Freak to Warm.
- Arrange 1/4 to 1/2 cup of the desired filling over one half of the omelette, keeping it slightly away from the edge. When using cheese, place it against the warm eggs so it melts readily.
- Using a flexible silicone spatula, carefully fold the unfilled half of the omelette over the filling.
- Leave the omelette on Warm just long enough to heat the filling and melt the cheese, if using.
- Gently slide the omelette onto a warm serving plate. Add the selected sauce, cheese, herbs, or other garnish and serve immediately.
Cook’s Notes
Why 310°F works: The controlled temperature gently sets the eggs while giving them enough structure to support an American-style filling.
Use an 8-inch pan: Two eggs in an 8-inch skillet produce an omelette thick enough to remain tender while still folding easily.
Butter goes in immediately before the eggs: Once the pan has stabilized at 310°F, add the butter, swirl to coat, and immediately add the eggs.
Prepare everything first: Meats, vegetables, potatoes, mushrooms, sauces, and other fillings should be completely prepared before the eggs go into the pan.
Keep fillings relatively dry: Brown mushrooms thoroughly, drain wilted spinach, and remove excess liquid from tomatoes and salsas.
Do not overfill: About 1/4 cup filling produces the easiest fold. Use up to 1/2 cup for lighter ingredients.
Sauce after folding: Unless a particular variation specifies otherwise, spoon the sauce over the finished omelette rather than filling the omelette with it.

Sauce Suggestions
Several sauces already in the Carter Family Recipes collection can be used to build additional variations:
- Easy Hollandaise — ham, asparagus, spinach, mushroom, smoked salmon, or seafood
- Hollandaise — a more elaborate sous vide option for restaurant-style presentations
- Caribbean Hollandaise Sauce — crab, shrimp, avocado, or other seafood variations
- Pepper Jack Cheese Sauce — Southwestern, green chile, bacon, sausage, or Tex-Mex variations
- Texas Heat Sous-Vide Salsa Verde — chorizo, green chile, avocado, chicken, or Southwestern variations
- Salsa Roja for Chile Rellenos — poblano, chorizo, beef, chicken, Monterey Jack, or other chile-forward variations
- Country Gravy — sausage, bacon, cheddar, potato, or loaded-breakfast variations
- Bacon Gravy — bacon, sausage, cheddar, potato, or breakfast-style variations
Use enough sauce to complement the eggs rather than bury them. In most cases, spoon the sauce over the folded omelette immediately before serving.
Serving Suggestions
For a classic American breakfast, serve with crisp bacon or breakfast sausage, breakfast potatoes or hash browns, buttered toast, biscuits, or fresh fruit.
For brunch, pair the omelette with a lightly dressed green salad, roasted potatoes, fresh berries, or seasonal fruit.
Match the accompaniments to the variation: potatoes and toast complement traditional cheese and Denver omelettes, while avocado, salsa, and seasoned potatoes work particularly well with Southwestern and Tex-Mex versions.
Beverage Suggestions
Coffee, café au lait, hot tea, iced tea, orange juice, grapefruit juice, tomato juice, or a fresh fruit smoothie all pair naturally with the basic omelette.
For Southwestern and Tex-Mex variations, consider iced tea, limeade, or a citrus-forward juice. Richer steak, bacon, sausage, and cheese variations pair especially well with strong coffee or unsweetened iced tea.
