Ingredients

For the Eggs and Rice

  • 3 large eggs
  • 1/2 cup hot cooked rice
  • 1 teaspoon neutral cooking oil, if needed for the skillet

For the Soy-Chili Sauce

  • 1 tablespoon dark soy sauce
  • 1 tablespoon water
  • 1/2 teaspoon cornstarch
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil

For the Toppings

  • 1 tablespoon sesame seeds
  • 3 tablespoons sliced scallions
  • 1 tablespoon chili crisp, or to taste

Instructions

Prepare the Rice and Sauce

1. Warm the rice. Have the cooked rice hot and ready in a serving bowl.

2. Mix the sauce. In a small bowl, whisk together the dark soy sauce, water, cornstarch, rice vinegar, and sesame oil until the cornstarch is fully dissolved.

3. Prepare the toppings. Slice the scallions and set out the sesame seeds and chili crisp.

Cook the Eggs

4. Heat the skillet. Place a nonstick skillet over medium-low heat. Add the neutral oil only if the skillet needs it.

5. Add the eggs. Crack the eggs into the skillet, keeping the yolks intact. Cook gently until the whites begin to set.

6. Add the sauce. Stir the sauce again, then pour it around the eggs rather than directly onto the yolks.

7. Simmer briefly. Let the sauce bubble gently until lightly thickened and the egg whites are cooked to your preference. Lower the heat if the sauce reduces too quickly.

Assemble and Serve

8. Plate the eggs. Carefully slide the eggs over the hot rice and spoon the sauce around them.

9. Finish with toppings. Sprinkle with sesame seeds and scallions, then add the chili crisp.

10. Serve immediately. Enjoy while the rice is hot and the eggs are tender.

Cook’s Notes & Tips

Dark soy sauce: Dark soy sauce is often sweeter and less salty than light soy sauce, but brands vary. Taste the finished sauce before adding extra seasoning.

Sauce consistency: Cornstarch thickens quickly. If the sauce becomes too thick, stir in a teaspoon of water at a time.

Egg doneness: For firmer yolks, cover the skillet briefly and cook until the eggs reach your preferred doneness.

Chili heat: Chili crisp varies widely in spice level and saltiness. Begin with less if you prefer a milder bowl.

Serving Suggestions

Vegetables: Serve alongside quickly sautéed bok choy, wilted spinach, or sliced cucumber for freshness.

Rice options: Use freshly cooked jasmine rice or reheated leftover rice that has been heated thoroughly.

Beverage Suggestions

Tea: Unsweetened iced green tea or hot jasmine tea balances the richness of the sauce.

Variations

Extra vegetables: Add sautéed mushrooms or baby spinach beneath the eggs.

Milder version: Reduce the chili crisp and offer it at the table.

More substantial bowl: Add cooked edamame or tofu alongside the rice.

Garlic-ginger sauce: Add 1/2 teaspoon freshly grated ginger and 1 small minced garlic clove to the sauce for a more aromatic finish.

Crispy-edged eggs: Cook the eggs in a little extra neutral oil over medium-high heat until the edges are lacy and golden, then reduce the heat before adding the sauce.

Sesame-forward bowl: Finish with a little extra toasted sesame seed and a few drops of toasted sesame oil for a nuttier flavor.

Protein boost: Serve with crisped tofu, shredded cooked chicken, or leftover sliced pork.

Vegetable-packed bowl: Layer sautéed bok choy, mushrooms, or spinach over the rice before adding the eggs.

Extra-spicy version: Add thinly sliced fresh red chili or an additional spoonful of chili crisp just before serving.

Lighter sauce: Use reduced-sodium soy sauce in place of dark soy sauce, recognizing that the flavor and color will be different; taste before serving.

Storage & Reheating

Refrigerator: For best texture, serve immediately. If saving leftovers, refrigerate promptly in a covered container and use within 1 day.

Reheating: Reheat leftover rice and eggs until steaming hot throughout; the yolks will become firmer.

Freezing: Freezing the assembled dish is not recommended because the eggs lose their texture.
