Carter Family Recipes

A mixture of shortening, oil, and flour can coat pans for recipes that call for greasing and flouring. It is not suitable for recipes that require an ungreased pan.

Recipe Information

Yield: one batch, approximately 1 1/2 cups
Preparation requires no cooking.

Prep time: 5 minutes
Cook time: None
Total time: 5 minutes.
Difficulty: Level 1 — Beginner ■□□□□
Cost: Level 1 — Budget $

Ingredients

  • 1/2 cup vegetable shortening
  • 1/2 cup vegetable oil
  • 1/2 cup all-purpose flour

Instructions

  1. Whisk together until smooth and evenly mixed.
  2. For a recipe that calls for greasing and flouring, brush a thin layer over the required pan surfaces, reaching corners without leaving puddles.
  3. Follow the cake recipe for lining, filling, baking, and cooling.

Cook’s notes

Equal volumes can make a smaller batch. Contains wheat. Do not claim superiority to all commercial releases or a validated long room-temperature shelf life. Make a small amount, keep covered and refrigerated, stir if separated, and use promptly. The raw flour mixture is not for tasting.

Serving suggestions

This is a pan preparation, not a food to serve by itself. Use only when the baked recipe calls for a greased-and-floured pan.

Beverage suggestions

No standalone pairing; choose a beverage for the finished cake.

will this work for a cocoflan cake

This mixture is intended for pans that call for greasing and flouring. Because cocoflan recipes vary, I’d follow the pan-preparation instructions for your particular cake rather than assume a flour-based release is suitable for the custard layer.
