Carter Family Recipes

Fresh strawberries become glossy, juicy, and intensely flavorful after a short maceration with balsamic vinegar, sugar, and freshly ground black pepper. Served with cold vanilla ice cream and a touch of fresh lemon zest, this simple dessert balances sweetness, acidity, fruit, and gentle peppery warmth with almost no cooking.

Ingredients

  • 4 pints fresh strawberries, about 8 cups, hulled and thickly sliced
  • 5 tablespoons balsamic vinegar
  • 2 tablespoons granulated sugar
  • 1/4 teaspoon freshly ground black pepper
  • 2 pints vanilla ice cream, for serving
  • Finely grated fresh lemon zest, for serving

Instructions

  1. Prepare the Strawberries: Place the sliced strawberries in a large nonreactive bowl.
  2. Season the Fruit: Add the balsamic vinegar, granulated sugar, and black pepper. Toss gently until the strawberries are evenly coated.
  3. Macerate: Let the strawberries stand at room temperature for 30–60 minutes, stirring gently once or twice. The berries should soften slightly and release enough juice to form a glossy balsamic syrup.
  4. Taste and Adjust: Taste the strawberries before serving. If the berries are especially tart, add a small additional pinch of sugar. If they are naturally very sweet, no adjustment should be necessary.
  5. Serve: Spoon the strawberries and some of their balsamic juices into individual dessert bowls. Add a scoop of vanilla ice cream and finish with a light grating of fresh lemon zest.

Cook’s Notes

Use Ripe Strawberries: This dessert depends heavily on the quality of the fruit. Fully ripe, fragrant berries need less sugar and produce the best flavor and syrup.

Choose a Balanced Balsamic Vinegar: Use a balsamic vinegar with both sweetness and acidity. An overly sharp vinegar can overpower the strawberries.

Why Black Pepper Works: Freshly ground black pepper heightens the aroma of strawberries and adds subtle warmth without making the dessert taste overtly peppery.

Do Not Over-Macerate: Thirty to sixty minutes is ideal. Longer maceration can make the strawberries excessively soft and watery.

Serve the Berries at Room Temperature: Their flavor is more pronounced when they are not refrigerator-cold, and the contrast with cold vanilla ice cream is especially appealing.

Add Lemon Zest at the End: Fresh zest is most aromatic when added immediately before serving.

Serving Suggestions

New Orleans Beignets: Serve the strawberries alongside warm beignets for a rich, fruit-forward dessert. The crisp fried dough and powdered sugar contrast beautifully with the tangy berries.

Buttermilk Whipped Cream: Use this in place of, or alongside, the vanilla ice cream. Its gentle tang complements both the strawberries and balsamic vinegar without making the dessert overly sweet.

Vanilla Pound Cake: Spoon the strawberries and their juices over slices of pound cake for a more substantial plated dessert.

Fresh Shortcake Biscuits: Split warm or room-temperature shortcake biscuits and top with the balsamic strawberries and whipped cream for an easy variation on strawberry shortcake.

Beverage Suggestions

Strawberry Limeade: Bright strawberry and lime flavors echo the fruit while providing enough acidity to keep the pairing refreshing.

Brut Sparkling Wine: Dry bubbles and bright acidity contrast with the sweet berries and vanilla ice cream while complementing the balsamic vinegar.

Unsweetened Iced Tea: A clean, refreshing nonalcoholic pairing that allows the strawberries to remain the focal point.

Light-Roast Coffee: A smooth, lightly roasted coffee provides enough bitterness to balance the ice cream without overpowering the fruit.

Storage

The dressed strawberries are best served the day they are prepared. Refrigerate leftovers in an airtight container and use within 1–2 days. The berries will continue to soften and release liquid as they sit.

Store the strawberry mixture separately from the ice cream and combine them only when serving

Strawberry Shortcakes – Strawberries with Balsamic Vinegar, New Orleans Biegnets and Whipped Cream – it doesn’t get any better!

I know strawberries and pepper sound pretty strange – but we all agreed it makes a excellent improvement to the strawberry flavor.
