This Creamy Gochujang Pasta is a fusion of bold Korean flavors and comforting Italian-inspired pasta. The bucatini is coated in a rich and velvety gochujang cream sauce, which perfectly balances the spicy, smoky, and umami notes of the Korean chili paste with the creamy smoothness of heavy whipping cream. Finished with a touch of Parmesan cheese and garnished with green onions and optional chili oil, this dish is a harmonious blend of spice and comfort that’s perfect for weeknight dinners or special occasions.
Ingredients
- 10 oz pasta (bucatini or your favorite variety)
- 2 Tablespoons olive oil
- 5 cloves garlic, minced
- 3 green onions, thinly sliced (keep whites and greens separate)
- 3 Tablespoons gochujang paste (Korean chili paste)
- 2 cups heavy whipping cream
- 1/4 cup Parmesan cheese, shredded
- 1/2 teaspoon salt
- Optional: Chili oil or chili crisp for garnish
Procedure
- Prep the Ingredients: Mince the garlic and slice the green onions, keeping the whites and greens separate. Shred the Parmesan cheese.
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Reserve 1/2 cup of pasta water, then drain the pasta.
- Make the Sauce Base: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and the whites of the green onions. Sauté for 30 seconds, until fragrant.
- Incorporate Gochujang: Add the gochujang paste to the skillet and stir to combine with the garlic and green onions. Cook for 1 minute, allowing the flavors to meld.
- Add Cream and Cheese: Slowly pour in the heavy whipping cream while stirring constantly. Add the salt and Parmesan cheese, and continue to stir until the cheese melts. Cook the sauce for 2–3 minutes on medium-low heat until it thickens slightly and deepens in color.
- Combine with Pasta: Add the cooked pasta to the skillet, tossing to coat evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency. Remove from heat immediately to prevent the cream from separating.
- Garnish and Serve: Plate the pasta and garnish with the green parts of the sliced onions. For an extra kick, drizzle with chili oil or add a spoonful of chili crisp. Serve hot and enjoy!
