Oi Muchim is a vibrant and refreshing Korean side dish that pairs perfectly with rich mains like creamy gochujang pasta. Thinly sliced cucumbers are dressed in a tangy, slightly spicy marinade made from soy sauce, rice vinegar, gochugaru (Korean chili flakes), sesame oil, and a touch of sugar. This quick and easy salad delivers a crunchy texture and zesty flavor profile that balances heavier dishes, making it an ideal complement to your meal.
Ingredients
- 2 medium cucumbers (preferably Korean or Persian cucumbers)
- 1 teaspoon salt (for salting cucumbers)
- 1 Tablespoon soy sauce
- 1 Tablespoon rice vinegar
- 1 teaspoon gochugaru (Korean chili flakes)
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar (adjust to taste)
- 1 clove garlic, finely minced
- 1 teaspoon sesame seeds (for garnish)
- Optional: sliced green onions or chopped cilantro for garnish
Procedure
- Prepare the Cucumbers: Thinly slice the cucumbers into rounds or half-moons, depending on your preference.
- Place the cucumber slices in a colander, sprinkle with salt, and toss to coat evenly. Let them sit for 10–15 minutes to draw out excess moisture.
- Rinse the cucumbers under cold water and pat them dry with a clean kitchen towel or paper towels.
- Make the Dressing: In a small bowl, mix the soy sauce, rice vinegar, gochugaru, sesame oil, sugar, and minced garlic. Stir until the sugar dissolves and the ingredients are well combined.
- Toss the Salad: In a mixing bowl, combine the cucumbers with the dressing. Toss gently to ensure the cucumbers are evenly coated.
- Chill and Garnish: Transfer the salad to a serving dish. Sprinkle with sesame seeds and, if desired, garnish with green onions or cilantro. Chill for 5–10 minutes before serving to allow the flavors to meld.
Cook’s Notes
For extra crunch and flavor, add thinly sliced radishes or julienned carrots to the salad. This dish is best enjoyed fresh but can be stored in the refrigerator for up to a day.
