Perfect as a standalone indulgence or the closing note to a five-course tasting menu.

Ingredients

  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 3 oz 70–75% single-origin dark chocolate
  • 1 Tablespoon Dutch-process cocoa powder
  • 2 teaspoons raw sugar (or to taste)
  • 1/2 teaspoon pure Tahitian vanilla extract
  • Pinch of fleur de sel (or Maldon sea salt)
  • Optional: 1 Tablespoon Valrhona chocolate pearls or 24k edible gold flakes for garnish

Preparation

  1. In a medium saucepan over low heat, combine the whole milk and heavy cream. Warm gently until small bubbles form around the edge—do not boil.
  2. Whisk in the cocoa powder and raw sugar until fully dissolved.
  3. Add the chopped chocolate and stir constantly with a silicone spatula or wooden spoon until the chocolate is fully melted and the mixture is silky smooth.
  4. Stir in the vanilla extract and a small pinch of fleur de sel. Remove from heat.
  5. For serving cold: chill in the fridge for 1 hour, then shake vigorously in a cocktail shaker with ice and strain into a chilled rocks glass.
  6. For serving warm: froth with a handheld milk frother until airy and pour into a pre-warmed ceramic cup.
  7. Garnish with chocolate pearls or a single edible gold flake floating on the surface for an elegant final touch.
