Carter Family Recipes

These smoky, tangy refrigerator pickled eggs combine the rich heat of chipotle peppers in adobo with toasted spices, garlic, charred onion, and a balanced blend of white vinegar and apple cider vinegar. Light brown sugar and honey soften the acidity without making the eggs sweet, while Worcestershire sauce and turmeric add subtle depth and a beautiful golden color. After a week of curing, the eggs become richly seasoned with a smooth, smoky finish that makes them perfect for snacking, charcuterie boards, sandwiches, or Bloody Mary garnishes.

Ingredients

  • 18 large hard-boiled eggs, peeled
  • 9 ounces white vinegar
  • 9 ounces apple cider vinegar
  • 18 ounces water
  • 2 Tablespoons pickling salt or kosher salt
  • 1 Tablespoon light brown sugar
  • 1 Tablespoon mild honey
  • 3 chipotle peppers in adobo sauce, finely chopped
  • 3 Tablespoons adobo sauce
  • 1 teaspoon Worcestershire sauce
  • 8 cloves garlic, thinly sliced
  • 1 small onion, cut into thick slices
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • 1 1/2 teaspoons coriander seeds
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon celery seed
  • 1/2 teaspoon dried Mexican oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground turmeric
  • 2 bay leaves

Preparation

  1. Peel the hard-boiled eggs and place them into a clean half-gallon glass jar or divide them evenly between two quart-sized jars.
  2. Heat a dry cast-iron skillet over medium-high heat. Char the onion slices for 2 to 3 minutes per side until lightly blackened around the edges. Allow to cool slightly, then tuck the onion slices and garlic evenly around the eggs.
  3. In a medium saucepan over medium heat, toast the black peppercorns, mustard seeds, and coriander seeds for 30 to 60 seconds, stirring constantly until fragrant.
  4. Add the white vinegar, apple cider vinegar, water, pickling salt, brown sugar, honey, chopped chipotle peppers, adobo sauce, Worcestershire sauce, smoked paprika, cumin, celery seed, oregano, thyme, turmeric, and bay leaves.
  5. Bring the brine to a gentle boil, stirring until the salt, brown sugar, and honey have completely dissolved.
  6. Reduce the heat and simmer gently for 5 minutes.
  7. Remove the saucepan from the heat, cover, and allow the brine to steep for 15 minutes to fully extract the flavors from the spices.
  8. Carefully pour the warm brine over the eggs until they are completely submerged. If necessary, use a fermentation weight or another food-safe weight to keep the eggs below the surface.
  9. Allow the jars to cool to room temperature, then seal tightly with lids and refrigerate.
  10. Refrigerate for at least 7 days before serving. For the fullest flavor, allow the eggs to cure for 10 to 14 days.

Cook’s Notes

  • These are refrigerator pickled eggs and are not shelf stable.
  • Charring the onion adds a subtle roasted sweetness and complements the smoky chipotle beautifully.
  • Toasting the whole spices before simmering produces a noticeably deeper, more aromatic brine.
  • The 15-minute covered steep extracts maximum flavor without creating a harsh vinegar bite.
  • Turmeric contributes a traditional pickled egg color without making the eggs taste like curry.
  • Worcestershire sauce disappears into the background while adding exceptional depth and umami.
  • For a milder version, reduce the chipotle peppers to two.
  • For additional heat, add one dried chile de árbol to each jar.
  • Always keep the eggs completely submerged in the brine.
  • Store refrigerated for up to 3 weeks.
